Juniors have.an all-enthusiastic, con vincing way of announcing to mother that “everybody’s wearing so and so, and I want one Just exactly like It.” Keen perception, when It comes to observing details, Is one of childhood’s chief accomplishments. When little ensemble the central theme around which all style revolves, who would attempt the Impossible? All the modish world pays homage this season to the two or three-piece costume, whose relationship is estab lished by virtue of fabric, color and design. HINTS FOR THE COOK When you have a surplus of dry bread, try the following recipe: Queen of Bread Puddings. — Take one phit of bread crumbs, one quart— of milk, one cup ful of sugar, the yolks of four eggs, the grated rind of a 1 e m o n, two tablespoonfuls of butter. Mix and hake in u buttered pan set in hot water.. When done spread with hits of Jelly over the top apd the white of eggs- beaten stiff, wil!h one cupful of sugar added and the Juice of the lemon. Brown lightly In the oven. Caramel Blancmange.—Soften one tablespoonful and a half of gelatin In one-third of a cupful of cold water, i Brown one-half cupful of sugar In a smooth Iron frying pan, stir constantly while cooking. Then add a scant half cupful of water and let the mixture boil to a thick smooth sirup, fool a little, then turn it over tin* softened : gelatin; when this is dissolved strain | Into three cupfuls of cream. Perhaps no fabric lends Itself more enchantlngly to these belong-together dresses and coats than do the now-so- fashlonable gay printed crepes. What if the color of most of these fantastic prints he fiamboyant or their pattern ing overbold, are they not to be worn under coats of most sedate and proper cloth, satin or silk? The vogue for plaits, which, by the way, are used on Spanish Steak.—Take three pounds of round steak cut two and one-half Inches thick, season with two teaspnon- fuls of salt, pepper to taste, and a tablespoonful of butter. Strawberry Salad.—Serve large ber ries In cups of the tender heart leaves of head lettuce. When ready to serve pour over a eream mayonnaise, using two tablespoonfuls of mayonnaise well seasoned to a half cupful of whipped crennr. Serve with cream cheese and wafers. Balls of cream cheese, on lettuce, covered with thick gooseberry pre serves makes a delicious accompani ment to almost any salad course. Mold the cheese In very small glasses and when well chilled remove from the molds. Clam Soup.—Wash a quart of clams, open the shells end remove the meat. Place In a how] and chop tine, saving all the liquor. Binse the shells with cold water aTiTT'add this^Ifo the other liquid. Place the liquor over the fire and bring to the boiling point, add a pint of scalding hot milk to the strained clam liquor. Huh a table- spoonful of butter to a paste with a tahlespoonful of flour, add to the soup nnd bring to the boiling point; sprinkle with chopped parsley, add,the clams and serve hot. t'risp fried bacon may he added to the soup if desired. Tasty Foods. An old Virginia recipe for johnny | cake may be prepared as follows, but baked in an oven if the old-fash ioned method not available: Virginia John ny Cake one quart meal into a bowl, pour on gradually one pint of warm water in the center and, mix gradually until a smooth bat- ter-4s formed. Beat until light, adding a teaspoonful of salt. Spread thick on a smootii hoaru amt hake before the tire until brown. When done cut into squares, split and butter and send to the table. •Windsor Sandwiches.—("ream one- third of a -cupful of butter, add one- half cupful each of chopped cooked chicken and ham that has been boiled. Into lilts and mix with nn equal quantity of crisp fresh lettuce"broken into hits. Stir in a boiled dressing nnd pile on a plate edged with lettuce. Steamed Brown Bread.—-Take one cupful of sweet and sour nillk.t two cupfuls of corn meal,-one jund onerhatf cupfuls of flour, a teaspoon ful of salt, two-thirds of a cupful of/piolusses, two teaspoonfuls of soda, beat well imd steam two flours. j ——■, Celery and Oyster Bisque.—Cover one cupful of finely chopped celery with one pint of water and stew slowly one-half hour. Drain and wash two dozen oysters; throw them into a saucepan and shake over the fire, cook ing them five minutes. Drain, saving all the liquor. Mix the celery with the oysters which have been chopped, add the liquor and one quart of rich milk. Mix well twp tablespoonfuls each of butter and flour, add to the soup and cook ten minutes. Strain through a fine sieve, adding salt and white pep per to taste. Serve In bouillon cups.
