Mr. K. G. Solomon*, of Scotia,
Hampton county writes, to the News
and Courier:
I will give you my experience of 4T
years. In that time I do not remem
ber seeing an insect of any kind in my
meat.
1 kill my hogs, cut up while hot and
salt, using one desert spoon of saltpe
tre and one large tablespoon of sugar
to each ham or shoulder. Spread them
out in the smoke house on pine tops,
let them remainMwo nights and one
day. The second morning I salt and
rub again, and pack in barrels the
hams and shoulders at the bottom of
the barrel, sides on top to exclude air,
and th«« barrels covered tight. I put
under the ground barrels up to top of
ground.
After the meat has been in that state
two or three weeks ? smoke.
The day 1 stop smoking I have a
large pot of boiling water prepared,
dip each ham or shoulder hi watef, »o
as to destroy any insect oreggsoitne
same during the smoking process, say
about twenty seconds. As the meat
comes out of the water I rub hickory
tet hikeory ashes
