Hawkins, extension animal husbandman, announcing tbe reprint ing of Ehctenslon Bulletin 94, Canning Meats OB the Farm. Canning is a method for conserving fresh meat in Its original appetizing condition. Can ning provides a means by which ex cessive use and waste of fresh meat may be eliminated at butchering time, and makes possible si better distribu tlon throughout- tbe year. Bulletin 94 contains Information on the type meat animals to slaughter. It discusses slaughtering the animals, cooling the carcasses, and cutting tbe meat to best advantage. Detailed in formation is Included on- equipment for canning beef, veal, mutton, lamb, pork and chicken. Three different meat-canning meth ods are discuss^ in tbe bulletin. Method No. 1 employs oven cooking of the meat before it is packed in containers. Method No. 2 Involves cooking the meat in water before packing it. Method No. 3 is the one by which meat is put directly into tin cans, processed in a water bath, and then sealed. The bulletin gives recipes for mak ing hamburger, beef balls, sausage, headcheese, barbecued chicken and other familiar meat dishes.
