The best fruits for jelly are cur
rants, grapes, sour apples, eran- i
berries, goose berries, raspberries,
plums and blackberries. .Jelly can be
made from pears, peaches, and straw
berries by the addition of pectin.
Select firm, ripe fruit. It should
not be over-ripe as pectin is best in
fruits that are just ripe or slightly
under-ripe. Pectin is the substance in
fruit that makes the juice jell, but it
cannot jelly without acid.
Wash fruit carefully, cut in quar
ters, barely cover with cold water and
bring to a boil. If peaches, pears, or
strawberries are used add one cup of
the .chipped white of the lemon peel
to one gallon of cut fruit. This gives
the necessary amount of pectin, I.et
j I ruit cook until tender. Do not let
the fruit cook to pieces and become j
mushy. You i- jelly will be cloudy in
this cave. W hen the fruit is cooke i,
turn into a jelly bag and It- 1 drip over
night. I >o not squeeze. The dripping
I overnight gives, a luster and sparkle
to jelly.
For small fruits and berries use
under lipt fruit if possible. Wash
carefully, mash and add 1 -j cup of
