Pound and Half of Good Food
Every Day.

anta. Households which formerly
kept twu or three now got along with
one maid. Many manage with half a
servant, sharing her with a neighbor.
Not a few housewives have been driv
en to the ueceHMlty of doing their own
cooking nud sending the washing to a
laundry.
This ha* meant a great deal of dis
comfort. but then* has been an Incl
dental gain. Waste Ih enormously re
ducedr
Servants make nearly all the waste
of a household. Many housewives, de
prived of "lady help," have been as
tonlshed to observe a shrinkage of
their food bllla, notwithstanding the
present doubled and trebled prices.
When a domestic establishment em
ploys half a dozen servants the waste
Is enormous. Nearly always In a
house run on that scale the butler and
cook "stand In" with the butcher and
grocer, and their rake-off Increases
with the amount of food they throw
away.
Recent Investigations by the New
York health department proved that
the average family living It) a private
house, with one or more servants,
throws away a pound and a quarter of
perfectly good food every day.
It was found that the average apart
ment house family thrown away only
one-fifth as much ? largely, doubtless,
because such families reduce domestic
service to a minimum.
In the tenement districts of Now
York one garbage can usually suffices
to hold the food refuse 'of 20 families.
But In the "private house .districts'* It
was found that 103 families hgd 175
garbage pails, or more than a pall
apiece. '
Examination of the 175 palls re
vealed 18 poupds of bread and rolls,
50 pounds of meat, 55 pounds of pota
toes, 1(5 pounds of cereals and large
quantities of perfectly edible fresh
vegetables.
Always the amount of food waste
varies directly with the number of
servants employed; As a matter of j
fact, the full garbage pall seems hith
erto to have been regarded In this
country ns n manifestation of pros
perity. Not until very recently have
people begun to think that possibly
this was a foolish Idea. '
Mosquitoes and Colors.
The mirtarin -carrying mosquito, it
and ivpelled by others. Experiments
hit been conducted in a gauze tent,
one end of which was formed by large
windows. Into these the sunlight
poured "?i bright days, I, urge stone
in?5 were pliK-ed on the floor for the
mosquitoes to breed in. It was imme
diately noticed that when a person en
tered- the tent- e*td? -tn dark gray
clothes, the mosquitoes settled on the
cloth. When the person who pilfered
was dressed in white flannel, they did
not approach him. A number of hoses
lined with cloth of various colors were
placed In rows upon the floor, and it
was noticed that groat numbers of
mosquitoes entered the box lined with
dark blue. Fewer of the insects sought
the boxes I inert with the other colors,
the number diminishing in this order:
I>ark red, brown, scarlet, black, slate
gray, olive green, violet, leaf green,
blue, pearl gray, pafe green', light blue,
orher. white and orange. No mosqui
toes whatever were found In the box
