To Do Everything Possible to Help Win
the War Is Object of Railroads

To do everything possible to help win the war has been the object
of the railroads since the war began and will be their object until the war
is won. Everything else must be subordinated to that object. That is
why the railroads of this country have eliminated all individual interests
and competitive rivalries and have been operated as parts of a single
system under the railroads' war board.
With no increase in their facilities, the railroads have transported
an enormous volume of government business, including troop movements,
in addition to the heaviest commercial freight and passenger traffic ever
known. With the continued patriotic co-operation of the public, the rail
roads will keep on doing what is most necessary to win the war.
They have not broken down and will not break down under the enor
mous burden imposed on them by war conditions.
They look to the future with confidence and hope in view of the assur
ances contained in the president's proclamation assuming on behalf of
the federal government their control and direction, and will continue to
render the best service of which they arc capable under the new order of
things.

old. Well, you want a good, satisfying
meal which the whole family will en

cook and must supply what your bodies
need to help you grow, uod to help you
work or play and keep warm. And, If I
the spirit of war sacrifice abides In |
your household, the meal should reflect
your food saving efforts.
People of all nations have used com
binations of foods cooked together In
one dish. Perhaps you can remember
such dinners In your grandmother's
home. Why not renew th# custom and
seive your family with a nutritious
one-dish dinner occasionally, for vari
ety at least? For such a dinner you
might serve a fish chowder. Here It Is,
a dinner in one dish, sure enough. This
one, and the others that follow, makes
enough for five persons :
Fish Chowder.
1\4 lbs. fresh fish, 2 cupfula carrots,
(cod, haddock, cut in pieces,
etc.) or lb. salt lb. salt pork,
or Cried flsh. 3 cupfula milk.
? potatoes peeled Vfc teaspoonful pep
and cut In small per.
pieces. 8 tablespoonfuls flour.
1 onion sliced.
Cut pork In small pieces and fry with
the chopped onion for five minutes. Put
pork, onions, carrots and potatoes In
kettle and cover with boiling water.
Cook until vegetables are tender. Mix
three tablespoonfuls of flour with one
half cupful of the cold milk and stir
in the liquid In the pot to thicken It.

In the selection of the Ingredients to !
combine with the meat you may make I
another one-dish meal.
Hot Pot of Mutton and Barley.
1 pound mutton. 4 potatoes.
H cupful pearled 6 onions.
barley. Celery tops or other .
1 tablespoonful salt. xeaaonlnK herbs.
Cut the mutton In small pieces and
brown with the onion In fat cut from I
meat. This will help make the meat |
tender and Improves the flavor. Pour ,
this Into a covered saucepan. Add two |
quarts of water and the barley. Sim
mer for one nnd one-half hours. Then
add the potatoes cut In quarters, sea
soning herbs, and seasoning, and cook
one-half hour longer.
This is nlso good served as a shep
herd's pie with mantled potatoes lining
the dish and piled on top for a crust.
The stew Is better If thickened with a
Uttle flour In this case before adding
to the mashed potato crust.
Or your one-dish meal might be of i
dried peas or heans Instead of meat or
combined with other vegetables.
Here is a hearty dish made from split
peas. Many kinds dried peas or
beans could be used In the same way :
Split Peas, Rloe and Tomatooa. j
1V4 cupfuls rice. lA teaspoonful pep
1 pint split peas. per.
6 onions. 2 cupfuls of tomato ?
1 tablespoonful salt (fresh or canned).
Soak peas over night In two quarts i
of water. Cook unti. tender In water !
In which they soaked. Add rice, on- !
Ions, tomatoes and seasonings, and 1
cook 20 minutes.
Such meals are a help to the busy !
housewife on especially busy days, as
they are easy to prepare nnd make but J
few dishes to wash. With broad And 1
butter and Jam, perhaps, or stewed \
fruit, any one of them makes a well- 1
chosen nutritious meal. If there are I
children In the family give each one a
glass of milk besides. Such a meal
will satisfy the body's needs as well j
as a more elaborate one.
Cottage Cheese Salad.
Nutritious salad makes a good dish
for a home luncheon. As they are rich
In protein, cheese salads take the place |
of cold meal dishes. The following Is
an Inexpensive, nutritious cottage
cheese sulad:
Mix thoroughly one pound of cheese,
one and one-half tablespoonful s of
creuin, one tablespoonful of chopped
parsley, nnd salt to taste. First, fill u
reotangulnr tin mold with cold water
to chill and wet the surface. After
removing the water, lino the bottom
of the mold with waxed paper; then
pack the cheese In three layers, put
ting two or throe parallel strips of
pimento, lettuce leaf, or chopped nuts,
between Inyers. Cover with waxed
paper and sot In a cool plaro until
ready to servo; then run a knife
around the sides and Invert the mold.
Cut In slices and serve on lettuce
leaves with French dressing and waf
ers. Minced olives may bo used In
stead of the parsley, and chopped nuts
also may be added.

ing money. Don't stick too closely to
habits and customs In the food you eat.

Five Ways to Food Variety.
We must have food to grow, to keep
warm, and to work. Our food must be
nutritious In that It does all these
things. It Is nlso Important that It
should taste good. It will not only he
better relished, but It will bo better
utilised by the body If It doe?. Food
will be more healthful, more palatable,
and more nutritious If tt Is varied.
Variety may be secured by selecting
for the dally diet something from each
of the following five groups of food:
' (1) Fruits and vegetables; (2) milk,
meat, eggs, cheese, flsh, peas, beans,
1 and nuts; (3) cereals; (4) sweets; (5)
