in potatoes as served. For ex
ample, a potato of medium size-
boiled, pressure-cooked or
baked - provides only about 100
calories, approximately the
same number as a large apple
or orange or banana. Fried
potatoes may be two to four
times as high in calories as the
same weight of boiled, baked,
or pressure-cooked potatoes.
No matter how potatoes are
to be cooked, first remove
sprouts and cut off green por
tions. If potatoes are pared,
keep parings thin.
To get the most food value
from potatoes, cook them whole
in their jackets; boiling in as
little water as possible saves
the most vitamins.
Pared potatoes usually re
tain their whiteness better dur
ing boiling than potatoes cooked
in their skins. If potatoes aren’t
cooked immediately after par
ing, cover them with water to
prevent darkening.

for potato salad or for scallop
ed potatoes or other dishes for
which the potatoes are cut in
pieces before cooking.
To speed cooking, cut po
tatoes Into pieces and cook in
as little water as possible In a
tightly covered pan. Cooking in
a smjill amount of water reduces
nutritive losses. And although
the larger amount of exposed
surface of cut potatoes tends to
increase loss of nutrients, this
may be offset by a shorter
cooking time.
Don’t overcook potatoes. Po
tatoes cooked only until done
1 are at their best in taste, food
value, and appearance.
POTATO PUFF
2 cups hot or cold seasoned
marshed potatoes - 1 egg, sep
arated - 1 teaspoon grated onion
1 teaspoon salt - 3 tablespoons
hot milk - 2 tablespoons butter
or margarine, melted - 2 table
spoons cut parsley - pepper
To the potato add the hot
milk, beaten egg yolk, butter
or margarine, onion, parsley,
salt and pepper. Mix well. Beat
egg white until stiff and fold
into the potato mixture. Pile
lightly into a greased baking
dish. Bake at 375 degrees F.
♦or about 35 minutes, or until
rown. For a deeper brown,
put the dish under the broiler
for 3 or 4 minutes.
MEXICAN POTATO BALLS
MEXICAN POTATO BALLS
1-1/2 cups hot mashed potatoes-
1/4 teaspoon chill powder - 1/8
teaspoon powdered dry mus
tard - 1 teaspoon milk - 2 eggs
beaten - 1/2 teaspoon salt - 1
teaspoon grated oniog - 1/2 cup
shredded cheese - 1/2 cup dry
breadcrumbs
Combine potatoes, eggs, sea
sonings, and milk.Blend cheese
and breadcrumbs. Add one-half
of the potato mixture. Shape into
balls and roll in remaining
cheese and breadcrumbs. Fry In
deep fat at 380 degrees F. until
golden brown. Drain.
POTATO - CHEESE SALAD
1/2 cup mayonnaise - 2 cigjs
diced cooked potatoes - 1 tea
spoon salt - 2 tablespoons chop
ped onion -1/4 cup sweet pickle
Juice - 2 hard-cooked eggs,
coarsely chopped - 1/2 cup cel
ery, coarsely chopped - 1-1/2
cups diced cheese
Thin mayonnaise with pickle
Juice. Combined with remaining
ingredients. Chill salad
thoroughly to blend flavor. Ser
ve on crisp salad greens. If
desired, garnish with sliced
pickle.
