Fresh grapes are of two
separate types - the European,
grown chiefly in California; and
the American, grown princi
pally in Eastern and Central
States.
Western grapes usually have
a higher sugar and solids con
tent, and many are larger than
the Eastern type. The skin and
pulp of the Western type do not
separate, but seeds readily
separate from the pulp.
Select grapes that are ma
ture, plump, and fresh in ap
pearance, with individual
berries firmly attached to the
stems. A deep color for the
variety is generally a good
indicatioo of a well developed
sugar content and flavor.
Usually white or green
grapes are at their best flavor
and sweetness when they be
gin to turn an amber color. A
few varieties remain green in
color when fully ripe.
Store grapes In a cool dry
place. Wash them before eat
ing.

Combine pulp, skins, and
sugar. Combine ingredients;
bring slowly to boiling, stirring
occasionally until sugar dis
solves. Cook rapidly to, or al
most to, jellyingpolnt, depend
ing upon whether a firm or
soft jam Is desired. As mix
ture thickens, stir frequently
to prevent sticking, pour boil
ing hot into sterilized jars.
Adjust caps.
CONCORD GRAPE PE
(Canned for fresh grapes)
4 cups blue grapes
1 egg, beaten
1 cup light brown sugar
2 tablespoons flour
1/4 teaspoon cinnamon
1/4 teaspoon clove
2 tablespoons butter
pie pastry
Used canned grapes or pre
pared fresh ones as follows:
Slip the skins from the grapes,
put the pulp in the top of the
double boiler, cook for twenty
minutes and then mash them
through a sieve to remove the
seeds. Mix the pulp with the
skins. Beat the egg and add it.
Sift the dry ingredients and
combine with the grapes. Line
a pie plate with pastry and
sprinkle the bottom crust with
a very little flour. Add the
grape mixture, dot with bits of
butter, cover with a lattice
crust and bake 10 minutes at
400 degrees F., then 30 minu
tes more at 300 degrees.
COCKTAIL GRAPES
SUt Malaga or Kokay grapes
without cutting all the way
through. Remove the seeds.
Stuff with cream cheese blend-
$d with Roquefort and highly
seasoned with onion juice, salt
and Worchestershire. Smooth
the filling along the cut. Chill.
FRUIT AND CHEESE SALAD
1/4 Cup Roquefort cheese
spread
1/2 pint commercial sour
cream
1/2 lb green grapes
1/2 teaspoon seasoned salt
1 cantaloupe
1 bead iceberg lettuce
Early in day ©r several hours
before serving:
L. Blend Roque fort-cheese
spread with sour cream and
seasoned salt; then refriger
ate.
2. Cut cantaloupe in half;
remove seeds, pare of rind,
cut its meat into bite-size
chunks; refrigerate.
3. Wash and stem grapes (If
not seedless, halve and remove
seeds); refrigerate.
4. Cut lettuce into bite-size
pieces—1-1/2 quart in all. Turn
into saladbowl; refrigerate un
til needed for tossing.
Just before serving: To
lettuce add cantaloupe, grapes
and Roquefort dressing. Toss
lightly to blend. Makes 6 serv
ings. Serve with cold sliced
turkey, crisp rolls and choco
late sponge dessert.

Q. I have a large azalea
which is losing its color. Some
leaves are brown and falling.
In the early summer a large
plant wilted and died. I found
a small break In the bark near
the ground. What’s the prob
lem? And when should I fer
tilize azaleas again? Mrs. L.

A. Many Indian azalea va
rieties are subject to cold in
jury, something we saw a lot
of after last winter. The small
bark break indicates such da
mage. Once they suffer the In
jury, there’s no remedy; some
times plants with breaks will
live a couple of years and die.
Prevention is best —plant only
hardy azalea varieties tested
for the area in which you live.
Azaleas and <'ther broadleaf
evergreens can be fertilized in
November with 16-4-8, 12-6-6,
12-3-6, or other similar fer

Q. How do you get rid of
black water bugs and snails?
The bugs are beginning to come
in the house and the snails get
all over the proches. Mrs. E.

A. The black waterbug Is an
outdoor roach, known as the
smoky brown roach. (Or a close
relative.) They may come In
doors during warmer periods.
Chlorinated hydrocarbons such
as chi or done of dieldrin are
still effective against these
large roaches and should be
used outdoors and even Indoors
when they gain entrance. Ger
man roaches have become re
sistant to chlorinated hydro
carbons, and other materials
are needed for effective re
sults. Tightly fitted screens
and doors are needed. The re
gular services of an extermi
nator also help keep this and
other species of roaches down.
