Skim milk contains less than one per cent milkfat and all the nu trients of whole milk except those contained in the fat portion such as vitamins A and D (fat-solu ble vitamins). Often these vita mins are added and the product is then labeled fortified skim milk. Nonfat dry milk is made by re moving the water from fresh whole milk. It is an inexpensive source of high-quality milk pro tein, calcium and phosphorus, and water-soluble B vitamins. Most cultured buttermilk is made of fresh pasteurized skim milk with added lactic acid bac teria. But cultured buttermilk may also be made from fresh, fluid whole milk, and concen trated fluid milk (whole or skim milks or reconstituted nonfat dry milk). Buttermilk is the liquid re maining when cream is churned to butter. Cho colate-flavored milk contains cocoa rather than chocolate. Cho colate drink and chocolate-fla vored drink use the same fla voring ingredients as chocolate milk, but are made from skim milk. Non-fat dry milk (reconsti tuted) is the must economical form of milk. It costs from one- third to one-half as much per quart as fresh whole milk. How ever, nonfat dry milk, lacking in vitamins A and D and other fat-soluble-nutrients, is not e- qual to the nutritive value f whole milk. Milk fortified with multiple vitamins and minerals is generally the m >st expensive. Imitation or modified milkpro- ducts look, taste, and are pack aged like milk. They may be ei ther non-dairy or ‘ filled milk" products. They are substitutes for cow's milk and are less ex pensive. Milk in which other oils and fats have been substituted for milkfat is filled milk. Imi tations are sold as nondairy pro ducts manufactured to simulate milk. They are made mostly of vegetable fat, water, sugar, fla voring ingredients, and protein such as sodium caseinate or soy bean protein. (They are nondairy formulations.) Filled and non- dairy products may be in the form of milk, cream or sour cream, whipped cream and ice cream, and may be either liquid, powdered, or frozen. Frozen Milk Products: Ice cream has milk's food values. Ice cream is called a milk al ternate in the four food groups. A recommended equivalency is a half cup of ice cream for one quarter cup of milk. Frozen custard is a creamy- soft smooth ice cream with more egg yolk solids added. Ice milk contains fewer milk solids but usually more sugar than ice cream and is only slight ly lower in calories. Sherbet combines dairy ingre dients with fruit or juice. Water ice, although similar to sherbet, is a nondairy, frozen food made of water, sugar, and fruit or juice. Storing Dairy Foods: Since fresh dairy products are highly perishable, they should be kept cold and tightly covered and should be refrigerated as soon as possible after purchase. Do not let milk stand in the sunlight as it accelerates loss of riboflavin (one of the B vita mins). Keep unopened cans of evaporated milk and packages of nonfat dry milk at room tempera ture or in a cool, dry place. Un used dry milk should be stored in a tightly covered container. After dry milk is reconstituted, store it in the refrigerator. Freezing doesn't alter milk’s fo« d value, but it may detract from texture, taste, and appear ance. Homogenized milk and heavy cream can be frozen sat isfactorily, but if whole milk and light cream are frozen, fat and liquid separate.
