CAMP Extension Home Economist Whether they are long, short, chunky, slender, wide or pointed, sweet peppers add zest to main dishes and relish trays. Many varieties of sweet peppers are marketed fresh at the green stage. The long slender ernes can be cut up for salads, relish trays, casseroles, or creaming. Short chunky peppers can be stuffed and used to add color and flavor. Pepper should be refrigerated to retain their crispness. Cor rect moisture is important too. A pepper will shrivel if there is not enough moisture. If there is too much, it will become slimy, and decay. When you select fresh peppers, look for the firm, thick-fleshed and well-shaped ones with bright, shiny surfaces. Immature pep pers are soft, thin-fleshed and pale in color. Crooked and de formed peppers may be wasteful because of their limited use. If there is a surface blemish, check to be sure it does not pass through the fleshy wall. Peppers can be an important source of vitamin C, eaten in generous amounts. Peppers may be frozen with or without precooking, and their fla vor is pleasant in cooked dishes. However, they loose their crisp ness. For a summer treat, select red and green peppers for the Shisk Kebab.
