CAMP Extension Home Economist More and more Americans are eating more and more meals in the great outdoors. One indica tion of the American way of eat ing is the cook-out - the bar becue - the back yard grill, the picnic at beaches and parks. The American homemaker usually strives for convenience; but, outdoor eating may entail more work than indoor cooking. Pre-planning and preparing ligh tens the job for everyone. Here are some suggestions t( make outdoor cookery easier, safer, and more satisfying. 1. First comes the fire:, a. Charcoal briquet provide a stea dy, dependable fire. Some come packed with their own starter. They are easy to come by and light to carry, b. Wood - be sure it is dry - start fire with news papers and dry twigs under the logs. c. Be sure the fire is really ready before you start cooking. The wonderful charcoal flavor most of us like so much comes not from leaping, searing flames, but from a small, rosy bed of coals that look almost finished. If you start cooking before the fire is to this stage the food will be burnt on the outside and raw on the inside. 2. Grilling: A. Steaks and Chops - 1. Trim off as much fat as possible, so the drippings won’t cause too great a flare-up of the fire. 2. Keep a bottle of water handy to discourage over- eager flames caused by drip pings. 3. Spear the cut-off fat on a fork to grease the rack. 4. Allow 3/4 to one pound of beef steak, or two good-sized chops per person. 5. Keep meat out of refrigerator for an hour before putting on the fire - ex cept in the case of hamburger, which should go on directly. B. Chicken - 1. Whole split broil er, well oiled or marinated, can go directly on the grill. 2. Cook chicken parts on trays of aluminum foil, or in a broiler basket, to keep it from falling through the cracks. C. Fish 1. Fresh fish is too ten der to go directly on the grill and it will stick. Pan frying, or aluminum foil on the grill will be a better job. 2. Fish steaks and small shellfish grill well in a broiler basket, in very little time. 3. Spit barbecuing 1. Make sure not to choose an item too large for the size of the rotisserie. 2. Birds to be spitted should be very firmly trussed wings and legs tied tightly against the body, and tied to the spit in several places. 3. The meat must be speared directly through the mid dle, so weight will be evenly bal anced, and no slipping and sag ging occur. 4. Stick Cookery 1.Small, man ageable morsels of good things are threaded on slim green sticks or metal skewers, broiled, while being constantly to brown. 2. Be cause they’re cooked over high heat, the stick meals are best when some moisture is added, a. Frankfurters can be wrapped in bacon, or chunks alternated with bacon or tomatoes, b. Beef and lamb cubes usually are marinat ed before cooking - in just oil, salt and pepper, or with wine or vinegar, garlic, and spices. If you plan a picnic, make a picnic check list and tape it to the lid of your picnic basket or some other handy place where you can check it before you leave for your picnic. Thermos, saran, carving knife, can opener, paper towels, insect repellent, ice chest, tablecloth, napkins, serving fork, ice pick, paper bags, suntan lotion, picnic hamper, knives, forks, spoons, bottle opener, salt and pepper, newspaper, aluminum foil, paper of plastic dishes and cups, foil wrapped squares of moist paper towels. Optional - portable table and chairs, blanket, portable radio, water jug, paper bibs, and plastic containers of mustard, catsup, etc. MARVIN GAULT SR. Gault To Address Laurens Rotary Marvin G. Gault Sr., retired superintendent of the Bamberg Schools, will be guest speaker for the Laurens Rotary Club to day, Thursday. He is the father of Marvin Gault Jr., head of Industrial Engineer- ing with Clinton Mills, and Cally Gault, athletic director and head football coach at Presbyterian College. Gault, who makes his home in Bamberg, retired in 1965 after serving as superintendent of the Bamberg Schools for 20 years. Prior to that he was adminis trative principal in the Green ville City Schools for 20 years. lie began his educational ex perience as a principal and coach at Mullins High School for one year, then was athletic director at Carlisle Military School for four years, was commandant at the same school for two years and headmaster for three years. He received his undergraduate degree from Erskine College and his Master’s Degree from Pea body. He did a year of addi tional graduate work at Duke Uni versity. He is currently a member of the board ofSalkehatchieRegion al College--University of South Carolina Branch. Among his civic activities he is a former member and secretary of the GreenviUe Kiwanis Club, president of the Bamberg Lions Club, president of the Men’s Gar den Club, and a Mason. Among his church activities he is a district lay leader, teacher of the Men’s Bible Class, Chair man of the Board ofStewardsand Superintendent of the Sunday School. IN VIRGINIA — Pvt. Dennis J. Madden, Jr., son of Mr. and Mrs. Den nis Madden of Ware Shoals, completed Basic Training at Ft. Jackson, and is now stationed at Ft. Bel voir, Va.
