with a commercial spot remover.

“Be prepared.” You have to
go a long way to improve upon
the Boy Scout motto. The sooner
we learn that lesion, the better.
Well do I remember some
years ago a man who was able
to help me out because he was
prepared for an emergency for
which I was not. This incident
took place when my children were
small. I was returning home by
automobile just at nightfall. It had
just commenced to rain. The
children were fretful. Suddenly
without warning the automobile
coughed, and then stopped. A sur
vey of the car indicated that I was
without gas. I managed to get the
car to the side of the road with
the starter, got out and tried to
flag several passing autoists to
request them to have gasoline
sent back from the next filling
station. A number sailed by.
The children began to whimper.
I had no raincoat nor umbrella,
but prepared to get out in the
rain and walk to the filling sta
tion. I flagged one more car, a
Cadillac carrying a California li
cense. The lone driver stopped,
smiled broadly showing a big
gold inlay in his teeth, asked if
he could help. I told him I was
out of gas and asked him to have
some sent to me from the nearest
filling station down the road. He
smiled again and said,“Youdon’t
need to do that. I will let you
have some.” He opened the car
door and there on the floor were
three or four five-gallon cans of
gasoline. He said, “I’ve been
crossing the desert. I believe in
being prepared. Here, take five
and get on your way.” I tried to
pay him, but he again gave me
a golden smile and said, “My
compliments.” And on the way
he went.
Although this occurred some
years ago I still remember this
Incident of a man who was pre
pared to take care of an emer
gency need of a stranded fellow
motorist. I’m afraid it would be
hard to find a man who would
do that today.
We should not only be pre
pared for emergencies, but also
for opportunities. From the time
I was a small boy I was taught
to treat money with respect and
always save a part of what I
earned. This was so ingrained
upon me that during the lean
years of the Depression when I
was living partly on borrowed
money, I e\en saved some of
the money I borrowed.
As a result of this life time
habit I have been prepared at
times to buy a bargain for cash
which 1 could not have secured
on credit. The seller needed the
money now.
Jesus Christ admonished His
followers to always be prepared,
to live in a state of prepara
tion for His coming again. All
of us know we aren’t going to
live here forever, but many act
like they are. Well does the hymn
writer put it, “Lord, for Thy
coming us prepare, May we meet
Thee without fear, At all times
ready be, In faith and love pre
serve us sound, Let us day and
night be found, Waiting with joy
to welcome Thee.”

96 calories per serving. Thanks to the presence of unflavored
gelatine there’s no baking and no risk, either, the cheesecake
requires only 5 minutes cooking time. It’s just the kind of delec
table gelatine dessert that takes the deprivation out of dieting
and makes the dessert course a real pleasure for the weight-
watcher.
Low-Calorie Cheesecake
2 envelopes unflavored
gelatine
1 cup reliquified non-fat
dry milk
4 eggs, separated
Non-nutritive sweetener
equivalent to 1!4 cups
sugar
Vi teaspoon salt
1 teaspoon grated lemon
rind
1 teaspoon grated orange
rind
1 tablespoon lemon juice
l 1 /^ teaspoons vanilla
14 teaspoon almond extract
3 cups (24 ounces) mild
creamed cottage cheese
V4 teaspoon cream of tartar
14 cup graham cracker
crumbs
Vs teaspoon each cinnamon
and nutmeg
Sprinkle gelatine over milk in top of double boiler. Add egg
yolks; stir until completely blended. Place over hot water; stir
constantly until gelatine dissolves and mixture thickens slightly,
about 5 minutes. Remove from heat; stir in non-nutritive sweet
ener, salt, grated rinds, lemon juice, vanilla and almond extract.
Sieve or beat cottage cheese on high speed of electric mixer until
smooth, 3 to 4 minutes; stir into gelatine mixture. Chill, stirring
occasionally, until mixture mounds slightly when dropped from
spoon Beat egg whites and cream of tartar until very stiff; fold
into gelatine mixture. Combine graham cracker crumbs, cinnamon
and nutmeg; sprinkle about half of crumb mixture over bottom
of 8- or 9-inch spring form pan. Tum gelatine mixture into pan;
sprinkle with remaining crumb mixture. Chill until firm. Ixxisen
from side of pan with sharp knife; release spring form.
YIELD; 12 servings. 96 calories each.
