The flavor of coffee combines so well with so many things that
it appears year ’round in a variety of different delights. For the
long, hot days of summer, we suggest three coffee-accented re
freshers: frothy Coffee Ice Cream Soda, rich Coffee-Almond
Sundae and cool Mocba Frost.
The secret ingredient in the sundae and soda is a ready supply
of Coffee Cooler Syrup. It is easy to make and can be a life-saver
for whipping up instant snacks and desserts.
The third member of our summer coffee trio is Mocha Frost.
This thiret-quencher is made with extra-strength cold coffee—
another ingredient to keep on hand for on-the-spot refreshment.
Coffee Cooler Syrup: Dissolve Vt cup instant coffee in Vi cup
hot water. Blend in 2 cups dark com syrup and Vi teaspoon salt
Simmer 5 minutes. Remove from heat, skim, and add 2 teaspoons
vanilla. Cool. Store, closely covered, in refrigerator. Makes 2 cups.
Coffee Ice Cream Soda: Pour Vi cup coffee syrup into each tall
glass. Add 2 tablespoons heavy cream. Add a little ice-cold spar
kling water, stir. Put 1 or 2 scoops coffee ice cream into each
glass. Fill glasses with sparkling water, stirring gently to mix.
Coffee-Almond Sundae: Pour coffee syrup over coffee ice cream
(about 3 tablespoons per serving). Garnish with salted almonds
Mocha Frott: Have ready 2Vi measuring cups extra-strength
cold coffee, 5 tablespoons chocolate syrup and one pint coffee ice
cream. Place all ingredients in bowl, and blend with rotary beater
until smooth. Pour into tall glnsses. Serves four.
