ence county, third place — and a
prize of an electric frypan — in
the 1963 South Carolina Chicken
Cooking Contest.
Chicken far All
1 2Vi-lb. broiler-fryer
2 tsp. salt
6 T. shortening
2 cups uncooked rice
1 bell pepper, chopped
1 onion, chopped
6 ounces olives
. 1 No. 2 can tomatoes
1 No. 2 can garden peas
Vs lb. margarine or butter
2 cups water
Make standard cuts of chicken.
Roll pieces in flour to which salt
has been added. Heat the 6 T. of
shortening in skillet. Fry chicken
until light brown. Remove chick
en to casserole dish. Add 2 cups
uncooked rice to chicken. Brown
be)l pepper and onion In skillet
to which lb. margarine has
been l added. Add peas, olives, and
tomatoes (liquids drained off),
and mix thoroughly. Pour over
chicken and rice. Add 2 cups wa
ter. Cook for 1V4 hours at 375 de
grees. Serves 6.
