When dinners don’t seem quite am
ple or when you want to make one of
your family dinners into a more fes
tive occasion, add a delicious first
course.
Freeze ginger ale to a mush in the
automatic refrigerator and place a
scoop in a sherbet glass. Top this
with well chilled, drained fruit cock
tail and serve with maraschino cherry
or a sprig of mint.
Hollow out some orange shells if
you want a novel fruit cup. These
can be filled with a mixture of diced
oranges, sliced, fluted bananas, and
cut pineapple. Use maraschino cherry
syrup for flavoring.
When dinners are heavy, use one of
the thinner soups and serve small
portions. Cream of spinach soup can
be thinned with milk, then served at
tractively with a generous dash of
nutmeg.
Combination fruit juices make an
excellent first course which can be
served in the living room. One part
of grape juice fo two parts of pine
apple juice is excellent.
One inch green pepper rings make
an .attractive setting for a seafood i-
first course. Shrimp, crabmeat, lob
ster and halibut or any combination
of these with highly seasoned sauce
is delicious.
Chilled vegetable juices sparked
with lemon and Worcestershire sauce
make appetizing first courses. Serve
this with small balls of cottage
cheese seasoned with catsup, rolled m
finely grated raw carrot ana place on
a toothpick.
