Fried oysters are delicious and
puffy if you add sdme baking powder
to the flour in which they are rolled
before frying. A bit of celery salt
added to the flour, also, gives them
a delicious flavor.
When you boil ham or roast beef,
add a few whole cloves to the meat
before cooking to give it a delicious,
very delightful flavor.
RECIPE OF THE WEEK
Crusty Scrapple
{Serves 6)
1 pound bulk pork sausage
1 14V4- ounce can evaported milk
cups water
Vt cup yellow cornmeal
Vi teasoon salt
tfe teaspoon pmver
1 cup crushed corn flakes
Brown sausage and drain well.
Combine milk and water; measure
out 2 cups. Add to sausage, reserv
ing 'remaining % cup for dipping
scrapple. Heat sausage mixture to
boiling and slowly stir in cornmeal
and seasonings. Cook five minutes,
| stirring constantly. Pour into a 5 x 9-
inch loaf pan and chill until firm.
Unmold and slice into tfc-inch slices.
Dip slices in corn flakes, then in
milk, then again in corn flakes.
Brown in hot fat on both sides. Serve
with maple-flavored syrup.

The above tabulation, or chart, is having an intimate impact on the pocketbook of every South Carolinian.
Beginning July 1, it shows the exact amount of sales tax to be paid on every retail purchase, starting at 11 cents
and running through $50. The odd “millage” fractions are not, of course, of practical importance, but the Tax
Commission uses them for exact accuracy, because on purchases above $1 the "bracket” tax adds one penny for
each* additional 33 cents (or major fraction of 33 cents). The same calculation applies on purchases up to
$833.33. Between $83354 and $1,500, a flat “single item" tax of $25 is collected. 'Between $1,500.01 and $3,000,
the flat tax is $40, and above $3,000 it is limited to $75. The Tax Commission suggests that every citizen famil
iarize himself with the rate of tax, and that all persons engaged in general merchandising, post this chart for
ready reference. A copy of it on cardboard is furnished wit heach special license which retailers must obtain
inconflection with sales tax collection. The tax is due on all retail sales.
