RECIPE OF THE WEEK
Banna Chiffon Pie
(Makes 1 9-inch pie)
1 tablespoon unflavored gelatin
Vi cup cold water
1 cup mashed bananas
1 teaspoon grated lemon rind
4 tablespoons sugar
2 egg yolks
Va cup lemon juice
2 egg whites
4 tablespoons sugar
1 baked 9-inch pie shell
Dissolve gelatin in cold water.
Place banana, lemon rind, 4 table
spoons sugar and egg yolks in sauce
pan. Heat slowly, stirring constant
ly until thickened. Remove from heat
and add gelatin and lerpon juice.
Stir until blended. Cool. Beat egg
whites until stiff, Jhen fold in re
maining 4 tablespoons sugar slow
ly. Fold into banana mixture. Pour
into baked pie shell. Chill. Top with
whipped cream, if desired.
