Those tough cuts of meat can be
cooked deliciously tender in the
deep-well. Wipe and trim the meat
and put in the cooker without water.
Season with,, salt and pepper. Turn
switch on high. When steam comes
through the vent turn switch to low
and continue cooking on low heat
until meat is tender.* It will take
about three hours for two to three
pounds of meat, depending, of course,
on the cut and the coarseness of the
fiber. Remove meat, add water to
stock ancjllmake old-fashioned.gravy.
You can cook potatoes with the meat,
adding them an hour and a half be
fore you are ready to serve. But
don’t add water while cooking the
meat, let met cook .in its own juices.
If you like rich brown gravy, brown
meat on all sides before seasoning
and before covering the cooker.
Of course you use tne deep-^well
for making soups and stews, biit do
you steam brown bread and puddings
in it? When you use the deep-well
for steaming put in the rack and add
one cup hot water. Place molds con
taining bread or pudding on rack \
and cover cooker. Turn switch to
high heat. When steam flows freely
from vent turn switch to low and
steam for one and a half to 1 two,
hours. Time depends on size of molds. 1
