Jerusalem artichoke occasionally is
a good substitute for potatoes on the
dinner bill of fare. In fact ’ has been
sug;^ested as a permanent substitute

garden plant it is easy to grow and
is left in the ground to be dug at anv
time it is wanted during the winter.
As a matter of fai’t, Jerusalem arti
chokes are indigenou.s to America,
but are much'more used in Europe
than here at present.
They are trt'ated practically in any
way that p.dato is sem'td. To fry
them they should be first boiled in
sa’tcd water till they are tender and
then drain<*<l and .sliced thin and fritMi
in hot butter. T<t bake them they
should be first wash<Hl and pared and
then boihsi till tender. Tiien they
should be cut into .small slices, sprink
led with grated cheese* and cov(*red
with a ereanl sau’e, seasoned with
salt and pe'pper, and baked in a bak
ing dish for about twenty minuj.(*s.

through a lollatider and then serving
th«*m with pepper and butter.
They may also be serv<‘d in a thick
fioup or like x reamed potatoes. ('ol<l

liver, heart, etc., and cover with boil
ing water and cook gently for about
two hours. (The liver, etc., should be
cooked separately and used for sand
wich filling or some other disb call
ing for chicken grblets.) Have ready
five or six potatoes, pared and diced
or cut into cubes with French potato
cutter. Add to the chicken and cook
for twenty minutes more, or until the
potatoes are tender. Now add salt,
pepper, a little chopped parsley and
two tablespoons of flour mixed
smooth with a little cold water, and
boil three minutes more, stirring to
keep smooth. Have ready a large bak
ing dish lined with good pie dough.
Pour chicken and potato mixture into
it, cover with crust, brushing with a
little milk to glaze. Bake for about
twenty minutes, making sure that
A wer crust is done. If you like the
...wer crust may be lightly cooked be
fore the chicken is put in the dish.
The dieh is. greatly improved if, after
the chicken has been cooked, the bones
ai:c| most of the skin are removed. The
meat should be loft in as large pieces
as possible.
