Creamed Grden Onions
2 bunches green onions.
3-4 tsp. salt.
2 1-2 cups boiling water.
2 tbsp. butter.
2 tsp. flour. ^
1-2 tsp. salt.
Pepper. %
1 cup evaporated milk diluted with
1 cup boiling water.
Clean onions, leavifig as much of
the green sterns^ on as possible^ Boil
th^m in salted wat^r about ten min
utes. Drain off all water. Serve im
mediately with a white sauce pre
pared from butter, flour, salt and
pepper and diluted milk. Yield: 5 serv
ings.
Cottage Cheese-Chives Salad
2 cups cottage cheese.
1 tbsp. finely chopped chives.
1 tbsp. evaporated milk. *-

Lettuce leaves.
Combine cott^e cheese, chives and
evaporated milk, salt and pepper.
Toss lightly together. Arrange mix
ture in neat mounds on lettuce leaves.
Serve immediately. Some like may
onnaise with cottage cheese. Yield: 5
servings.^

ed butter and cap with the remaining
biscu^s. Bake in a hot oven (425 de
grees F.) Lift off caps,' add 1 tsp.
melted butter to each biscuit, then
sweetened ^ rhubarb. Put on capa,
crust side down and add more fruit.
Serve immediately. Yield: 6 servings.
Strawberry Bavarian Cream
1 quart strawberries.
3-4 cup sugar.
tbsp. lemon juice.
3-1 cup evaporated milk, heated to
a scalding point.
2 tsp. gelatin, softened with 1 tbsp.
cold water.

Stuffed Bacon Slices
12 Slices bacon.
2 l-^ cups bread crumbs.
Make a moist bread dressing. Place
one heaping teaspoon on one end of
slice of bacon; roll the bacon slice
around the dressing, and fasten with
a toothpick or small skewer. Broil,
to brown on all

Khubarb .Shortcake
2 cups pastry flour.
3 tsp. baking powder.
1 tup. salt.
! 2 tbsp. boiling water.
! Select sound well-ripened berries.

or force through a potato ricer. There

' be needed. Add sugar to pulp, then
