asks for a "tested recipe for small beet
pickles." All the recipes used in this
department are tested, unless other- ,
wise stated; sometimes an unusual

practical we use It. But In such cases j
we always state that It Is a coutrlbu- i
tlon.
To Pickle Small Beets?Choose those ;
of uniform size, clean them and put
to cook without bruising the skin. ;
They should be tender In 40 minutes.
Place in cold water and the skins will
rub off easily. Put the beets Into
la rue-mouthed jnrs and cover with j
scalding vinegar made as sweet as
you like It and spiced. The spice t
mixture should Include cinnamon,
cloves and allspice. These should be |
whole and he tied In a muslin hag |
and put in the vinegar while it heats.
I The vinegar should he pure elder, not |
acetic vinegar, and if very strong. '
should be weakened a little with boiling
water?very strong vinegar draws
the color from the beets.
Prudent housekeepers reckon they

relishes, like pickles, chili sauce, chow|
chow and stuffed mangoes. Those who
have their own kitchen gardens save

If you have cucumber vines In the
garden, gather tin* pickles every morning
and place them in brine until all
are pickled. Then drain and freshen
them, first in cold then in boiling water.
When they nre fresh enough put
them into Jars or bottles and cover
with scalding vinegar that 1ms been
sweetened and spieed to suit your
taste.

amount of mixed pickles you intend to j
make. Also scald nasturtium seeds,
small silver-skinned onions, tender
green heans and tiny pickles or larger
pickles cut small, Cut the llowerets
from the cauliflower, and cut tlie heans
In short pieces. Pack this mixture into
wide-mouthed hottles with a few chili
peppers to give color. To each pint of
hot cider vinegar you use add one tahlespoonful
of sugar, half a tenspoonful
of salt, two tuhlespoonfuls of mustard.
Cover all the pickles and seal
while hot. The spice mixture may he
varied to suit the taste.?Chicago Journal.
Cold Process Catsup.
Take one peck of linn, ripe tomatoes.
Peel tlietn cold without scalding. Chop
line in a chopping howl and strain o!Y
nil the Juice. This Is very Important, 1

the chopped tomatoes the catsup will
not keep.
Add to the tomatoes one tencupful
of chopped onions, one tencupful of
chopped celery, one tencupful of sugar,
one-quarter of a tencupful of salt, one
tencupful of mustard seed, one teaspoonful
of ground cloves, one teaspoonful
of black pepper, one teaspoonful
of cinnamon, four red peppers
chopped tine. Mix ail the Ingredients
together in a large stone jar,
then take three pints of pure cider vinegar
nttd tnlx thoroughly, then bottle.
This catsup will keep for years If care
is taken to have the tomatoes free

one-fourth cupful butter, milk enough
to mnke soft, pinch of salt. Leftover
pot roast or chickens are especially
good for tlds. but any meat may be
used and the peas add a great deal.
