0 Southern Sweet Potatoes in Europe.' News and Courier. The Jacksonville Times-Union predicts that within a few years thci touth will be almost as widely known jjj Europe for its sweet potatoes as fa its cotton. Thut sounds like a I daring prophecy in view of the fact that at present Europe knows next to nothing about the sweet potato, yet there is no good reason why it should not come true and there are several good reasons why it should. The Florida paper is moved to make its prediction by an experiment reported by the Federal Bureau of Markets in the latest issue of the Market Reporter. This experiment was tlx* shipment to Liverpool last March of tJOU pounds of l'orto Rico yams grown in Southern Georgia. The yams wire packed in 60-pound crates and shipped under ventilation. At Liverpool they were inspected and found to be in good condition. Sales, were readily made and recipes for the preparation of the sweet potato were distributed to each buyer. So successful was the experiment in every way tain according to the Market Reporter, "further experimental studies of the transatlantic shipment of this commodity" art; planned. Certainly they are studies well worth making. The sweet potato should be a boon to Europe now and if a European market is created the! South can supply it. Modern methods' of curing the sweet potato have re-1 moved the only real obstacle to makj ins it a great food crop of world-j wide instead of purely local im-j portanee. Our Florida nelphhnr'a prophecy that before very long En-' rope will think of the South in terms of sweet potatoes as well as in terms of Qotton may very well come true. ! ? ?
