finds herself confronted fro in every

angle of vision with some phase of
work. The season for earning, pick*
ling and preserving is right here and
she realizes that there is no/ longer
any doubt as to the benefits conferred
upon the general health of the fam- ,
ily by canning fruits and vegetables j
so absolutely essential to the diet of i
the household, these being the sources i
'
tmnr, which they derive vitamines. I
mineral matter and everything vitally
needful in keeping their physiques
in properly functioning order.
Knowing that a correctly balanced
diet is necessary for the welfare of
her family, she determines to procure
this varied diet through fresh vege- j
tables and fruits all the year. The

home maker realizes three important
things when the period for conservation
comes in. First: that home demonstration
canning methods have
made the way sure and easy for her.
Second: knowing the importance of
fruit and vegetables in the diet during
the entire year, she can entertain
no excuse whatever in a failure
to provide them. Third: she has the
assurance that a supply of canned
products makes her work easier, the (
canned fruit solves many dessert prob- j

lems and aid greatly in reducing the
grocery bills.
Cucumbers, cabbage and other
vegetables may be brined now to be
used later for pickles. Following is a

.Mix well, pour over vegetables as
soon as cold. Weight vegetable under
the surface of liquid, when fermentation
ceases, skim off white scum,
pour melted para nine over the surface
of liquid to seal tinril ready for
use. "When ready for pickle s-iak
vegetables in clear water <>v- r night,
drain thoroughly dry next morning,
pack jars and cover with spiced vine- :
gar. adding two cups <>f sugar t<> each
quart of vinegar if sweet pickles are .

Succession of garden crops must be
kept up, lettuce may be sowed every j
two weeks, use the Iceberg variety;

plantings of corn, thus giving an '
abundance for table use and to be
involved with okra and tomatoes in 5
