eggs properly preserved may be kept
tor 8 to 12 months in excellent condition
and used with good results.

given to the condition of eggs preserved.
If satisfactory results are to
be obtained, thfe eggs should be
frgsh and clean. Eggs that float
when placed .in solution are not f?*esh
and cannot be preserved. When only
slIgAtly soiled, a cloth dampened with
vinegar c$.n be used td^rem^ve such
stains. Under no circumstances should
badly soiled' or cracked eggs be used
for preserving: if put into the jar
while dirty they will" spoil, and wash
ing removes a . protective coating 1

Water-glass (Sodium silicate)
, Method?Use I quart "of water-glass
to 9 quarts of water that has beep
boiled and cooled. Place the mixtures
In a G gallon crock or Jar. This will
preserve 15 dozen of eggs; and will
serye as a% guid^/for ; the quantity
needed to preserve larger amounts of
eggs.
1. Select a: G trallon i-mnir > !/(
clean it thoroughly, after which it
should be scalded and allowed to dry.
2. Heat a quantity of water to
boiling point and allow to cool.
3. When cool, measure out 0
quarts of water, place it in.the crock,
and add 1 quart of sodium silicate,
stirring the mixture thoroughly.
4. The eggs should be placed in
the solution. It is not necessary that
all be put in at one time but ran be
added from- time to time, being careful
to allow at * least 2 inches of the
solution to cover the eggs.
5. Place the crock containing the
preserved eggs in a cool, dry place,
well covered to prevent evaporation.
Waxed paper covered ovpr and tied
around the top of the crock will answer
this purpose.
