Hints as to tlio Preparation of Holiday
Dishes, Etc.
Boiled Icing.?iBoil one cupful of
granulated sugar with half a cupful
-of water until it ropes when dropped
from a fork; pour this gradually over
the stiffly-whipped whites of two
eggs, beating hard. Add flavoring
and use at once.
ICjlityry Barquettes.?'Make some
little eases of puff paste similar to
tart' cases. Stew some cherries or
use the best canned fruit and put a
tablespoonful in each little case. Cover
with wiiippe I cream flavored with
vanila or wine, and put a cherry or
two on top for decoration.
Home-made Macaroons. ?Blanch
four ounces of almonds and pound
them to a paste with four spoonfuls
of orange flower walv:r, which can be
bought at the druggy's. Heal ihe
whites of four eggs to a stiff froth
and mix with Ihe almonds, stirring
in al the sjiine time one pound of
I inoly sifted powdered sugar. Line
your tins with a sheet of buttered or
oiied paper and drop the paste on in
little round cakes. Hake in a moderate
oven.
Apple ('ream.?Heel about one
pound ami a halt of cooking apples,
core and cut them up thin, put them
in a saucepan with a little water and
Ihe grated rind of one lemon. Stew
until soft, sweeten and rub through
a wire sieve. Meat half a pint of cream
until stiff, stir i| into tire apples and
color with a low drop's of cochineal
and pile lightly in a glass dish. Scatter
a few chopped nuts and little dabs
of currant je.lly over the lop. Serve
as co[ I ;is possible.
( I a re I .lellv. Soak one ounce of
gelatine in a half pinl of cold water,
I hea hoil until dissolved. Take onv
quart of claret wine, one pint of currant
jeliy, I hrec-(|uartcrs of a pound
of sugar, t'ul lire gelatine with this
mixture and stir all together over the
lire until Ihorougiily melted. Meat
the whiles of three eggs and stir
briskly into 111. > jelly, boiling i| two
minutes; reiuov IVorn the lire and let !

through a hag and put in glasses.
lava Cake.- Huh one cupful of.
butter and two cupful*; of sugar to-j
gellier jo ;i cream, add three eggs, one!
at a lime, beating well after each one.
Sill one and one-half pints of flour
and mix through it one and one-half
teaspoon fills of baking powder, adding
this to the previous mixture, and
also one cupful of stoned raisins,
half a cupful of chopped citron, liaif
a diptitl ot milk, little allspice and
nutmeg, and o:re cupful of very
strong collee. Mix into a smooth hatter
ami bake.
Card Cake.?Mix logetlier one cupful
?>f molasses, one whole egg and
yoik of an extra one, four tablespoonI
uls ot but ter, half a cupful of sour
milk with one level leasooonful of
soda stirred in two cupful* of flour
and a pinch of salt. Mix i his well
and roil out on a l'lou:vd board, cut-,
ling in small shapes, and bake ipiick- j

of the freezer begins to turn hard,

cream that has been whipped stiff.
Freeze until the consistency of tnush
is obtained. If desired this can be
used in chariot to ritsse cases.

Frozen Fruit Pudding.?'Beat the i
yolks of four eggs and iialf a cupful <
of sugar until iight; dissolve a table- I
spoonful of corn starch in a little 2
cold milk, add to the beaten yolks <
and gradually stir in four cupfuls of i
hot milk. Cook over hot water for i
fifteen minutes, stirring constantly ?
untii it thickens, and then only oe- 1
casionally. Oh op fine one cupful of '?
Knglisli walnuts and plump out a
cupful of raisins by covering them i
with boiling water, and, after standing
fifteen minutes, drain them and I
roll in granulated sugar. When Hie (
cooked mixture is cold add a little |

as ice cream. When half frozen add n

a cup of sweet milk and half a cup
of thick sweet cream. Boil until it
forms a soft ball dropped in cold
