Tapioca Poddibg.?Take two ounces *
of tapioca and boil it in half a pint of *
water nntil it begins to melt, then add n
half a pint of milk by degrees, and boil n
nntil the tapioca becomes very thick;
add a well beaten egg, sugar, and flavoring
to taste, mid bake cvntlv for three- c<
quarters of an hour. 3?his preparation tl
of tapioca is superior to any other, is ii
nourishing, and suitable for delicate n
children.
To Make Potato Cakes ?Prepare a
sufficient quantity of thick mashed po- *
tatoes lightly buttered and passed p
through a oolauder; add the yolks of ?
four eggs, mingle well, and oook three n
minutes longer; put the whole in a dish
and let oool; when wanted roll them
down on a floured table, give them the ..
size and shape of oodflsh balls, dip them b
in beaten eggs, then in yellow meal ?
flour; fry them in hot lard; see that they
are of a clear yellow color, and Berve e
them on a folded napkin.
Poor Man's Pudding.?Wash six
ounces of rice very clean, add four ounces
of sugar, three pints of rich -i
milk, one ounce of butter and a small J
teaspoonful of salt. After it has been {
in the oven ten minutes stir it well, t
Bake slowly for two hours or moro, and s
take it from the oven the moment it is
done. If on tipping the dish the rice
and milk move together, it is sufficiently .
oooked. If not sufficiently cooked, the
milk rnns from the rice. If too much ~
oooked, neither moves. Every grain of t
rice should bo perfect, surrounded and *
barely held together bv a rich creamy \
substance. This is a most delicious ?
pudding if properly baked, otherwise it *
is really unfit to serve. When nearly J

alone, or with sugar and cream.

Relics of the Mound Builders.

neighborhood of Milton, Wisconsin. e
There are there a number of mounds 1
whioh recent arohseological investigation
has referred to that mysterious race e
which inhabited the central portion of i
North America long before the present <
aborigines obtained a foothold hero.
Selecting the largest of these mounds the
oxplorers duga trenohfrom itsouter edge
to* the center, thirty feet long, five feet 1
wide, and at the center attaining a depth
of ten feet. About a foot from the hot- *
torn, at the deepest part of the excavation,
a layer of ashes and deeayed wood *
was laid bare. A few inches below this ?
was a hard deposit resembling mortar,
and beneath were found the remains of <
four adults and two children. That
they belonged to the race of mound
builders is inferred from the fact that
there had previously been exhumed,
only eighteen inches below the surface,
a oompiete Indian skeleton.-^. A
The other, and vastly more important
relics, were eight and a half feet lower
down. The first of these, the skeleton {

in a reclining position. At the knees, '
near each hand, were two ornaments,'
composed of the teeth of some wild animal,
about four inohes long, and having
hides bored through for the string .
Which attached them to the wrists.
Close by was the skull, but so badly decayed
as to prevent removal. A little
to the south of the skull were four perfect
flint arrowheads, as clCh^y cut as if
the work had been done by the best
modern machinery. Lying around and
nnder the shoulders ware twenty-nine
beads, manufactured from small shells,
and perforated so as to be worn as a
necklace. Evidently this was the skeleton
of some famous personage, for
among the bones of the five others uo
ornaments whatever wete found. The
chief's oompenions were arranged about
him to the west, northwest apd ea* t.
In the jaw bone of one was a partly developed
wisdom tooth, and most of the i
jaw Donee and teeth were in good preservation.
