Domestic Recipes.
Lbttuck Salad.?Two heads of lettuce,
two hard boiled eggs, two tablospoonfuls
of best salad or olive oil, otio
teaspoonful salt, one teaspoonful white
sugar, oue teaspoonful mustard, one teaspoonful
pepper, four tablespoonfuls of
vinegar or more as required; rub tlio
yolks to a powder and add the mixture;
thin with vinegar; cut up the lettuce;
put in a dish; pour the dressing over.
It is delioious.
Qihoeb ok Pop Bekr.?The following
is harmless Dut palatable: One and onehalf
ounces of best ground Jamaica ginger;
one and one-half ounces of cream
tartar; one pound of brown sugar; two
sliced lemons; four qv Arts boiling water;
one-half pint of yeast. Let it ferment
for twenty-four hours; strain and bottle
it. In two WPflln it Drill hn 1-. <1.1*, In
use.
SimfiiK Tonio.?If one will take a
teaspoonful of the extract of dandelion
three times a day in a wineglassfnl of
water it will improve the appetite very
much.
Oobn Meatj Muffins.?Full cupful of
flour, also one of Tndian meal (white is
the best), one egg, one and one-half cupfuls^sour
or buttermilk, one-half tablespoonful
lard, one-half teaspoonful sou a
or saleratus dissolved in the milk, 0110
tablespoonful sugar, little salt.
Light Pib Crust.?Pie crust will bo
found light if mixed with cold or ice
water, and handled as little as possible.
Mix with a knife as soft can be rolled,
three cupfuls of flour, one teaspoonful
salt, one cupful ef lard, rubbed in well
with the hands; then mix with the knife
sufficiout water to make a soft dough.
Take a piece of dough sufficient to cover
one pio and roll out a little, then spread
with lard, a little flour and salt sprinkled
over it, then fold over and repeat this
rolling and spreading three times. If
this does not make the crust sufficiently
rich and flaky, the next time roll out ami

and flour five times. Light pie cru'-t
depends mnch upon its being mixed soft
and cold and being but little handled.
Once spreading is sufficient for under
crust. Some ladies use a marble slab to
roll crust on instead of a board.
> How to Crystallize Fruit. ?Pick out
the finest of any kind of fruit, leave on
their stalks, beat the whites of threo
eggs to a stiff froth, lay the fruit in the
* beaten egg itith the st dks upward, drfliu
them and beat the part that drips oil
* again, select them ont one by one and
dip them into a cup of finely powdered
sngar; covor a pan with a sheet of fino
paper, place the frnit inside of it, and
set it in an oven that is cooling; when
the icing on the fruit becomes firm
pile them on a dish and set them in a
cool place.
Poultry Mum.
A correspondent gives the Boston
Cultivator the reenlts of some careful
experiments to determine the actual
comparative value of hen manure, from
which the following is taken :
I give the result of a little experiment
I made in 1868. I had been composting
my hen manure with ashes, and applying
it to my crops with very good results.
But "from what I had read I waalmost
certain that the oourse was
wrong and determined to set myself
right. The hen manure was piled upon
the barn floor and moistened with water
SO that it would heat ft lillln ftnfl lwwimo
fine; I then added the some balk of rich
loam that had had the wash of the barnyard
and a small quantity of plaster. I
took one bnshel of this mixture and applied
it to one hundred and forty hills of
oorn before planting, scattering it over a
circle of at least one foot in diameter.
No other manure was used on the plants.
I then took three pecks of the above
oompost and mixed with it one peck of
good ashes and applied it to the same
number of hills in the same .manner.
The oorn was planted May 29, out and
stocked cn September 8 and husked October
11. The portion with the hen manure
gave 144 pounds of sound corn and
two pounds of soft corn. The portion
with hen manure and ashes gave 109
pounds of sound corn and seven pounds
soft oorn. I also planted one hundred
and forty hills with nothing in the hills
and got eighty-four pounds sound corn
and thirty-one pounds soft oorn. The
hen manure increased the orop seventytwo
per cent., hen manure and ashes
thirty per cent. One-half bushel of hen
manure made thirty-five pounds of sound
oorn on the cob, and this approximates
very nearly the result I get from year to
year by using hen manure. Thirty-five
pounds of oorn on the oob are worth at
least thirty-five oents, which practically
makes the hen manure wortn seventy
cents a Dushel.
1 have just weighed a bushel of hen
manure from under the henroost and
find it weighs thirty pounds. According
to Bruokner's analyses, a bushel of hen
manure oontains:
Phosphoric acid, .045 lh., worth 16a per

In 1869 I made another experiment,
but mixed no ashes with the hen manure.
Three bushels of the oompost, mixed as
before, made ninety-one pennds of
sound oorn, or thirty pounds for one
bushel of the oompost.
California Grain Supplies.
A prominent grain operator gives the
surplus of wheat in California for shipment
this season as 760,000 short tons,
exoeeding by 200,000 tdns the surplus of
the crop of 1876. The yield is unusually
heavy in all parts of the State, and in
quality the grain is the best ever, har
aalea in the State. He gives the urioe
for July delivery alongside the ship ns
ninety six oents per bushel. He anticipates
no difficulty in procuring labor for
Iurrooting the crop aor in procuring
means for harvesting it from the interior
unless the bulk of the crop is held
until late in the season, which would
probably overtax the railroad facilities.
The tonnage of grain here and known to
be on the way is 460,000 tons. Oapaoity
enough is expected between now and
December to take all that is offered.
The surplus of barley is estimated at
76,000 tons, at fifty cents alongside ship.

There is a petty business done in large 0
lities, says an exchange, by the agents
or certain sewing machines which is 1
jure brigandage. An agent haunts the v

,il he induces one to buy a machine, to c
je paid for by installments. The rates q
it which the machines are sold to the
mot creatures is generally flftv ner cent, f
ibovo cash price, and at a profit of two '
aundred per cent. Let a poor seam- c
stress have paid within fivo dollars of
the full amount and fail of one month's
payment, 8hylock goes to his lawyer,
the machine is taken away under a clause
in the "contract," and the poor girl or
woman left to starvation or worse. The
means of earning her living are taken
from hor, and because she is poor and
ignorant of legal forms, she cannot even
get the money she paid or a part of it.
A. case with some striking features in it
was bronght into a police court in New
York. The woman had paid within ten
dollars of the full price for her machine.
It was taken from her. Maddened by a
refusal to return either money or machine,
she sought the " wild justice of revenge"
with a paving stone, whioh she
crashed through five hundred dollars'
worth of plate glass. This is an exceptional
case. The dispirited things that
see their machines and their money disappear
together generally Bit down and
"have a good cry " and go ou starving
as before. This woman's paving stone,
however, has brought their sorrows into
