BY JULIAN A. SELB^ A recent investigation in New York shows a general system of frauds in canned goods. It extends to every de? scription of fruits, incuts, vegetables and iish. At this examination, it was found that, in the case of clams, the solid con? tents of a one-pound can weighed 84 ounces; two-pound cans contained 1G|J ounces. Two-pound cans of lobster showed 24 ounces of solid contents. Cans of condensed milk turned out 13 ounces to the pound. The contents of cans of mushroons, after hiving been drained of water and squeezed dry, did not exceed Gt ounces to the pound. Corn beef in cans made the following exhibit: Six-pound can, C] pounds of beef; four-pound can, 3 pounds and 7 ounces of beef. All this is the result of dishonest competition. Canned goods arc sold by the can, the price graded upon the honest weight being put into the cans.
