Fo'e teneet of our readers we give below the following recipe for keeping sausage fresh until used. It is very simple and valuable, and wqrthy of. a trial. Thosu who have investe heavily in pork, will do well to make a note of this. When the meat is 6tst prOpared and seasoned, it will not be necessary to stuff it in anything, but jotst make it out in oakes of convenient site, then fry it, but not very hard or browu, in pure lard, and pack it closely in jars or tin cans, and fill the interatices with hot gravy, and it will remain as fresh and sweet as when fist cooked, for any length of time desired. When needed for use it can be warmed or refried, in the same lard or gravy at pleasure. By adopting this simple and certain plas, .all families that pickle their pork or beef, may be independent of the market for a fresh supply of fresh sausages during the whole sausage season, and such as do adopt it will not be likely to forget it or neglect it afterwards, for the principle and the result will both commend them. selves to the judgment and confidence of all that give it a fair trial. It will be well to expose the plants a few hours to the sun, and then bury their roots down in dry sand in acoold frame or in a cool cellar.
