OF THE RURAL CARO LNIAN: I have just read an article in your valuable monthly headed "Taters Don't Pay, or Cyphering on the Farm," which has induced me to give your readers an account of ari experiment made by me on one acre of potatoes last year. The figares are as follows: Da. Now if any of your readers think~ that potatoes don't pay it is because they don't try to make them pay.-H. P. G., In the Rural Carolinian. How TO RAISE CoTToN CHAP LY.-Last year I tried one acre of light red land, originally rich, which had been in oats the previous year. A heavy coat of grass was turned under in February, with a two'-horse plough. It lay thus till the first of May, when it was bed ded and planted in the usual way, selected seed being used. It never hecked working when needed, but suffered from drought in August. At the last working, in June, two shallow furrows were run, six inches from the cotton, and one bag of Stone Phosphate to the acre put in them. I sum up as follows: Dn. The cost of cotton, then, is just in proportion to what can be raised per acre; and from 600 to 1,000 pounds will not be far from an average of seed cotton. To'raise cotton cheaply, we must make an acre produce a great deal more.-H1. WILSON, In the Rural Carolinian. P ER M A NE N T WHITEWASH. With the return of spring comes the usual inquiry for a good white wash. Take half a bushel of un slacked lime, slack it with boiling water. corring it during the process to keep in the steam; strain the liquid through a fine sieve or strain er, and add to it a peck of salt pro viously well dissolved in water ; three pounds ground rice boiled to a thin paste, and stirred in boil ing hot; half pound of Spanish whiting, and a pound of clean glue! which has been previously dissoiv ed by soaking it first, ar.d then hanging over a slow fire in .a small kettle inside a large one filled with water ; acid five gallon~s of hot wa ter to the mixture, stir it well, and let it stan:d a few day\s covered fromr the dirt. it should he put on quite hot; for this purpose it can e kept in a kettie on a fuirnace. A pint of this mixture ail c.m-r a vard squaro cif the SEASONABLE RECIPES. SERVING ORANGES.-See that they Ire quite clean. Take a sharp knife and divide the skin quite through to: tie pulp from the tv end. ne-rly to the ste:m end. separating it into four or six r.r iht sezmncuts. Loo,sen these up froni the blcw end neurly to tl.e s:e:! end, lkavilg then standing around the b-rry like a calvx around a flower, and serve thea; on plates or piled up in glass dishes. When eat illg them, quite separate the berry fCoin the skin a;:d divide it into seg ments by the natural partitions. This is the neatest way, as it saves all the juice. Otherwise it may be cut across in round slices with a sharp knife. SAGO JELLY CAKE.-Pour three cups of boiling water on one cup of sago; let it stand two minutes; add three cups of 6nely chopped tart ap ples, the juice of one large lemon, one cup of stoned raisins, and one gill of sugar. Mix thoroughly and dip one inch thick in deep patty pans, or bis cuit pans. Bake in a moderate oven one hour or less, but do not brown. Let them stand till very cold, then put on plates and serve for supper. This can also be baked in a pudding dish and taken out in slices when cold. PEARL BARLEY PUDDING.-Boil or steam one pint of pearl barley in two quarts of water. Cover close and cook four or five hours, or until very soft. Then to three pints of this barley, add one quart of chopped apple and one pint of stewed raisins, or raisins and currants the juice of three lemons and one-half pint of sugar. Mix evenly and bake in an earthen pudding dish one and a half hours. Serve warm or cold. This wiil amply serve two persons. MAIZE PUDDI-N.-To two cups of cold boiled hominy, aad three cups chopped apple, the juice of two small lemons, one-third of a cup of sugar and two-thirds of a cup of Zante cur rants. Mix very thoroughly, being sure not to have any lumps of cold hominy. Bake one hour or more in a moderate oven, or until of a light brown. Serve cold. Good for lunches. [&ience of Realth. PICKLED CABBAGE.--Take five heads of red cabbage-heads rather below medium size-tear off all the ~loose leaves and crop the rest fine. Add also a peck of peppers chopped fine, after cutting open and clearing of seeds and stems; about a peek of large, .smooth, green tomatoes, sliced about half an inch thick; one-fourth pound each of ground cloves and cinnamon; half a pint of whole mustard seed, and a small teacupful of salt. The cabbage, peppers, salt and spices mix intimate ly and then put in jars or a tub-first a thin layer of cabbage, etc., and then one of tomatoes, and thus alternately, top ping ofi with the cabbage and peppers. Over the whole pour boiling hot cider vinegarsufficient to thoroughly saturate the same and let it stand even with the top of the pickle. Cover tight and leave to stand till cool, then set away. It is fit to eat in two days. OTSTER SOUP.-Take three quarts of oysters, and strain the liquor from them. Put the liquor on to boil with half a pint of chopped celery, one onion, two or three blades of mace, pepper and salt. When it boils, add the oysters. Just before taking it off, the thick ening must be added, viz., one spoonful of flour creamed into the well-beaten yolks of three eggs.I Pour a little of the hot soup grad ually upon the eggs and flour, stir ring all the while, and as soon as well mixed, with a little cream, pour into the soup. Then add one quart of rich unskimmned milk; let all come to a boil and pour in to a tureen over some small squares of cold bread. Serve it very hot. To MAKE HuAI Cvat.-The method employed by professional workers in hair is as follows: Wet! the hair to be curled, wrap it smoothly around a cylindrical stick1 or tube of proper size, tie it in! place, then put it in water andl boil it two or three hours, remove it from the boiler, wrap it carefully in a newspaper and bake it in a moderate oven for an hour. Thus trated, it will stay in curl perma nently. To ME.ND CHINAWARE.-Take a very thick solution cf gum-arabic, and stir it into plaster of Paris un til the mixture is of a proper consistency. Apply it with a brush to the fractured edges of the china ware and stick them together. In a few days it will be impossible to; break the article in the same place. The whiteness of the cement ren ders it doubly valuable. FOR KEEPING CIDER SwEET. Take of ground mustard seed four oun es, new milk one quart ; mix togeth er and put into the cider. After letting: it stand two or three days rack it off. throuh a he the size of a gimlet - Watches, Clocks, Jewelry. The Cincinnati Gazette makes the aston ishing announcement that Cincinnati beer is no longer pure, but adulterated with mo lasses, sugar of starch, fusci oil and the poisonous colchicum. The Commissioner of Agriculture, in his report for 1865, says that Prof. Mapes, of New York, analyzed the beer from a dozen different breweries, and found all of it adelterated.
