HOW TO IRON.
Laundresses give collars and
shirts that are to be stiff two dips,
first in boiled starch, after which
they are dried, (lipped again in
starch made with cold water and lie
till damp before ironing. Starch-ma
kirig is very simple. The essential
points are to have everything deli
cately clean used in making it, to
moisten the starch, first with cold
water, till it is like cream, and stir
it quickly while pouring boiling
i-ater on it till it is clear, with no
whitish streaks or lumps. While
it is hot a bit of speriaceti the size
of a great pea may be stirred in
for each pint of starch, and a tea
spoonful of gum-arabic water ; but
a clever laundress needs no such
aids. The polishing iron, with point
ground off to a curve, is the legiti
mate aid to her skill in finishing
linen. With uuslins the case is
different. They are to be dipped
in starch made by boilling half a
teacupful of rice a long time, till it
dissolves and the water looks like
clear starch. This, of c o u r s e,
makes a large quantity-enough
for seveual dresses. These must
he dipped and well wrung, then
clapped,to get all superfluous starch
out of the meshes.
Thin goods should be in the last
stage of dampness when ironed, all
roughness being retouched with a
moist sponge. The use of the
sponge is a great aid to success in
ironing. A wrinkle in a collar, or
rough, dry spot, may be dampened
bya stroke of the sponge and gone
over again. In ironing calicoes
and linens its use is constantly de
nmanded. Cotton fabrics should(
be ironed on the wrong side, and
linens on the right. Muslins must
not be ironed with heavy weights,
*but gone over quickly, with a thin
cloth laid above the wrong side af
terward finishing the gathers with
a sharp-pointed iron. The best
thing for ironing sleeves is a shape
ofthiek pasteboard; covered with
soft cotton, to be slipped inside the
sleeve and rubbed, first onie side
:mnd then the other. Two or three
sizes of the board miay be miade to
fit any sleeve. Puifs miay be fold
edl exactly in the center, and iron
ed~ as if they were ruflles,afterwards
rubbing the creases with thumb
and finger. At present it is not
the choice to flute ruffles except onI
undor clothiing,tesf gathered
ruffle heing qnite as graceful as the
crisp flower-like frills indutlged in
so long~. But really it saves time
to rip the timminns off a muslin

separately by passing through a

Lace eurtais are not to he iron

How TO SELECT FLOUR.-l.
Look at its color; if it is white, with
a slightly yellowish or straw colored
tint, it is a good sign. If it is very
white, with a bluish cast with white
specks in it, thelflour is not good.
2. Examine its adhesiveness-wet
and knead a little of it betwecu the
fingers; if it works dry and estic
it is good; if it works softand sticky
it is poolr. Flour made from spring
wheat is likely to be sticky. 3.
Throw a little lump of dry flour
against a dry, smooth, perpendicu
lar surface; if it adheres in a lump
the flour has life in it; if it falls like
powder it is bad. 4. Squeeze some
of the flour in your hands ; if it re
tain the shape given by the pressure,
that too, is a good sign. Flour that
will stai.d all these tests it is safe
to buy. These modes were giv'en
by old flour dealers, anid we make
no apology for printing them, as
they pertain to a matter that con
cerns everybody, namely, the qual
ity of that which is "the staff of
life."
