Xinericans are industrious, money making people, but they are not econ omical. Our housekeping is prover bial ywasteful, allowing leakage at ev ery*pent, sufficient in the aggregate, in manyhouseholds, to sUpport a Euro pean family. Some writer (we know not to whom to give the credit.) has mac :ie following extensive, but .by no means complete enumeration: Nueh waste is allowed in cooking meats.. Unless watched, the cook will throw out water in which meat has -been boiled, without letting it cool to take off the fat; or she will empty the dripping-pan into the swill pail. The grease is useful in many ways. Again, bits of meat are thrown out, which a French cook would convert into an excellent hash. Flour is sifted in a wasteful manner, or the bread-pan is left with dough stieking to it. lPie-crust is left over, and laid by tc sonr, inste,d of making a few tarts fol tea. Vegetables are thrown away whie would be nice if warmed over foi breakfast. Cream is allowed to mould and spoil mustard to dry in the pot, and vinegai to corrode the castor. Good knives are used for cooking it the kitchen, silver spoons are used t scrape kettles, and forks tor toastiuf bread. Tea, roasted coffee, pepper and spi ces are allowed to stand open and thu! -loose their strength. - Dried fruits not cared for in seaso& become wormy, and sweet-meats art opened and forgotten. Vinegar is dr-awn in a basin, an< permnitted to stand until both vinega and basin arc spoiled. Soap is left in the water to dissolve or more used than is necessary, an< the scrub-brush is left in the water. Barrels and tubs are left in th sun to dry and fall apart ; tins pu away without being properly dried ar rusted. Molasses stands open and flies tak posession. Apples decay for want of lookin; over. Pork spoils for want of salt, and bec because the brine wants scalding. Ashes are thrown out carelessly endangering the premises, and bein; wasted. Clothes are being whipped to piece by the wind on the lines; fine can brieg are rubbed on the wash-board and iacs are torn in starching. In our experience, oats sown early in September are most productive, but a drought sometimes prevents their being put in at that time. The jnext best period for sowing, is about the 20th of January.
