HOW TO GROW CARROTS.
Plow early in Spring, four inches
deep. Harrow well and roll or
bush down; let the ground lie till
after the middle of May; plow
again as deep as your team is able
to draw the plow. Harrow and
roll as before. Have the ground
in pertect order, no lumps and as
few stones as possible. Albout the
20th of May. lay out your fleld in
drills, 2j feet apart, struight and
IIlfiorm. ULC.e a smal!, on. hir,
plov; four inohes is deep el;ough.
Spread in the drill a siai onan; ity
o0 well rotted imiamure. )r otier
fertilizer: Close vot'lr drill wnh, a
coverer, or piov. leaving a mlound
w.Vith a level surface reidv for tlhe
seed-sower. Re-uhate tlhe %eed
Sower s() as to drop the seed froml
one-half to one inch apart ; o:e.
hal pound of seed is eiiolUg,h lor an
Before starting the sowing,
spread a little guano or phosphtie
on the top of the drill, very light
in the center where the sower
will come, and the seed will find
it early. With a careful hand.
proceed with the sowing, observ
ing at each end if the drill drops
the seed. When up, so that the
rows can be seen-say one halfan
inch hig,h-go into the field with a
steady horse. that will go slow
ataehed to a horse-hoe or cuitiva
tor; run light and very close. If
the machine don't work well, al.
ter it in some way so that it will.
Bend a point of an old seythe or a
stout hoop-iron, and put it in place
of the share, so that. you can go
close to the row and not cover the
small plants. Before the weeds
get too much started, go through
them again ; as they get larger,
cultivate deeper.
I never hoe. thin nor weed.
When the plants are a fair size
say one inch through-give them
a deep plowing with a small sub
soil plow and with two horses.
Let them remain till late, in the
grIo0und. Clip off the tops with a
sharp hoe. Run a subsoil plow
directly under- the carrots and
throw them out with a sitgle fur
row.
Pit or protect them on the field.
Cmver themn at first with the tops.
After a Iew days remove the tops.,
an:d!i secur!Ve them Well with earth:
never use straw or litter. They al
w:ys keep good in this way, and
never rot.
For a rcmber of years I have
had no difficulty in raising an.
abutndance of cartiOs in this war.
It requires a little pat ience mnd
pe-rseveran:ce. The labor is light
and cheap. On ordinary land
ca;rrors want but little mraniuret.
I1 thiink the top dressing be-fore
owing~ almost neces%ary toi insure
on potato ground, and where car
rots hatve been grown severa!t
years mn suees.,ion. My yieldl is
generally abou;Lt 15 tons per ue-re.
They will ahvays pay- better thatn
potatoes and can. be raised and
handled with less expeCnse; and if4
our horses could speak, we should
receive more than'.<s for raising
them.
LEAVES FOR FLAVORING.
The Garden. an English periodi.
ca! after- remarking that leaves are~
by no means so much used for
fiavor-ing :as they might be, adds
the following racia ugs
One of the most useful and corn
mon of all leaves for flavoring is
that ofthe coinmon syr-inga. When
cueumbers are scaree, these aire a
perfect substitute, in sal-ad sor-any
thing in which thatt fl:tvor is de
sired. The taste is not only like
that of cucumbers, but identical
a curious instance of the corre
lation of flavor in widely different
Again, the young leaves of
cucumbers have a striking likenes,~
in the way of fiavor-, to that. of the
fruit. The same may'~ be a.dirmed
of carrot tops, whicb are as~ lik~e
carrots in taste as may be. in
most gardens there is a prodiorious
wvaste of celery flavor in the sacri
fiee of the external leaves and th-eir
parmtitally blanched footsta!ks.
Score-s of sticks of celery are cut
up intO soup, when the outside
would flavor it equally well or bet
ter.
T he young leav-es of goose berries I
added to botted fruit give a fresh
er fiavor and a greener c-olor* to
pies anid t arts. The leaves of thec
tiower-ing curra nt give a sort of
intermediate fiavor between thiat
of black curr-an ts and red. Orange e
citr-on, and lemon leaves impat t1
a flavor einal to that of the fruit*
and rind eombitned, and somewhat
diffTer'nt fromn both. A few leav-es
aidded to pies, or boded in the milk
used to bake with rice, or formed
into crusts or- pat impart an
adm~iable anid almost inimitable
boquet.
To M&KE PU-RE WINE OF AP~
PLES-Take pure cider made from
sound ripe apples as it runs from -
the press; put sixty pounds of ~
eommioni bro~wn sugar into fifteen
galions of the e-ider, and let it dis
solve; then put the mixture into
a clean barrel, and fill the barre
up to within two grallons of being
