F >r every 100 pounds of pork take
10 quarts fine salt, 1 pound black pepper,
1 pound saltpeter, pound cayenne
pepper, 4 pounds brown sugar.
Dissolve the saltpeter in one quait
of warm water, then mix other ingre
dieiits with it, rub over the meat, and
on the fle9h part as much as will lie
or stay on.
Lay the meat on a board and in 24
or 36 hours put on the balance of the
mixture. Allow it to remain on 6 or
8 days, then hang up to smoke.
Put the mixture on the same day
the meat is killed, even if the meat is
warm.
