;dog. In training dogs avoid shouting.
'It is as easy to teach them to mind
?a single word or a whistle, and much
?more satisfactory, and remember that
much more can be accomplished by
kindness than harshness.

name and address of the seller, the

paid, and the name and address of

SOUTHERN RICE DISHES.
Ric? Is one of our most easily di
gested foods, Is reasonably cheap, and
should be more often
served.
Rice Stuffing for
Fowls. - Brown one
chopped onion in a ta
blespoonful bf butter,
and mix with it four cup
fuls of bolled rice and a
cupful of bread crumbs
that have been mois
tened In milk. Season
with sage, parsley or any
herbs desired ; add half ai pound of
sausage meat br finely chopped pork ;
salt and pepper to taste.
Rice Griddle Cakes.-Boll half a cup
ful of rice; when cold mix one quart
of sweet milk, the yolks of four eggs
and flour to make a stiff hatter; beat
the whites to a froth, stir in a tea
spoonful of soda and two of cream of
tartar, add salt and fold in the stlfuy
beaten whites of the eggs. Bake on a
hot griddle; spread while hot with
marmalade; sprinkle with sugar aud
serve at once.
Rice Croquettes.-Scald a pint of
milk in a double boiler; add a half
a cupful of well-washed rice. Cook
until thick ; add the yolks of two eggs,
half a teaspoonful of salt, and two
tablespoonfuls of smrar. Remove from j
the heat, heat smooth; add half a tea
spoonful of vanilla or the grated rind]
of hali a lemon. A bay leaf cooked |
with the rice adds a line seasoning,
which may he removed when the de
sired flavor ls reached. Spread on a
Hat dish and allow to chill. Sugar may
he omitted if not liked.
Rice With Eggs.-rut two table
spoonfuls of salt, a tablespoonful of
onion, and a half cupful of rice into a
saucepan; st ir and cook until tin; rice
is yellow, then add a cupful of stock
Of any kind, and when the rice ls ten
der stir in two or three eggs; when the
eggs are cooked serve at once. Sea
son willi salt anti paprika. This is a
dish that is especially appetizing,
makes a few eggs se; ve for four or i
five, and is also econon leal.
Any cold rice may be stirred into
any muffin or gem hatter, or rice Im
proves griddle cakes. With thin cream
or top milk It is an ideal supper for
children, plain boiled, i>ensoued with
