--To f'orru a proper idea of the difficulty .of
feeding a large army, it, ts only necessary to
visit one of the Commissariat Depot?. Take
tho single artielc of btesd tor the army of the
Potomac, ard we timi it? requires a building
covering an acre ot" ground} twenty ovins
are iu constant op?ration,.two hundred work
men are'cmploved, and Gve hundred barrels
of flour daily converted into ninety thousand
loaves, of twenty-two ounces each, of tbe"bcst
quality of bread. The army regulations re
quire that each man shall receive a daily ra
tion of twenty-two ounces of bread, or of
fl--ur; Dy baking the savingiito the Govern
ment in the month of June alone was 3171
barrels of flour, and in four mouths the differ
ence in the cost of flour and bread ha** beiei
euooga to pay all the cost of erectiug and fur
nishing the bakery^ with a surplus of #7000,
while the army bas better bread' than - could
have been.mo.le ia cain p. Some idea of the
magnitude ol" its operation?-may be gathered,
