VIEG1aR FRoM BETs,--Good vinegar is an almost indispenstible article in every family, many or which purchase it at a con sidierable annual expense; wiile some use but a very indifferent article; and others, 6r vant of a little knowledge and less in dustry, go without. It is an easy matter, however, to be at all times supplied with good vinegar, and that too without much eip-ns e. The juice of one hushel of sugar beets; worth twenty-five cents, which any a'rmer can raise without cost, will make 'from five to six gallons of vinegar, eqnl to the best made of eider or wine.-Grate the beets, having first washed them, and express the juice in a cheese press, or in many other wavs which a little ingenuity can suggest, and put the lignor into an empty barrel; ovebr the bung,-hole with ganze, and set-it inl the sun, aihd in twelve or fifteen days it V-bflWready for use. POULTRY AND Eous.-1 do a small busi nes in raising and putting up garden seeds nad last fall, a year ago, as I was Clearing out sotne red pepper seeds in my back yard, I threw the chucks and chaff promiscuously about. I soon observed my hens pickiig them up and swallowing them with great avidity. They soon commenced layinmg eggs,'though they had laid none for a mouth before. I have fed them two or three times a week since then, with red pepper, and they have never yet stopped laying, sunmer pr winter, spring or fall, except while they .. ,were hatching their chickens; and I aim confident, from more than a year's experi ence, that by this method, liens may be made to lay the year round.
