THAIXIXG SCHOOL FOR COOKS.
There Should Be One Such School In
Every Home.
I We copy the following from a long letter
sent by a housekeeper in which complaint is
made of the scarcity of domestic servants, the
high wages demanded and the poor quality
or the service:
" Forty years ago things were not like (his,
wages not high aud service was good. Do
you not think that there ought to be schools
for training domestic servants?"
Certainly, madam, there should be one
sucu school in every home.
No matter whether girls dwell In luxury or
not, they ought to know bow to cook and sew
aud wash aud Iron and keep boute. We all
have contempt for the young man of wealth
who grows up without occupation and with
no capacity to do anything. Yet that in the
way In which most American girls are being
reared, even In the ranks of the wage-earner.
Every mother now seems to think it demeaning
fo* her daugnter to learn todo hard work.
She expects her to marry a man who will be
able to provide plenty of servants. And If
she is so fortunate, how can she expect good
service when she cannot do the work herself
nor explain bow It should be done?
If the average man knew as little about his
work as the average woman does about housework,
the country would soon be in a state of
chaos. We men have plenty of opportunities
to learn better methods; but they seldom aocept
them. No woman is competent to run
a household unless she knows every detail
of the work and can perform it herself.
Would the Carnegie Steel people employ a
president or superintendent who did not
Know his business?
And now, dear madam, and all women who
read this: When on Thursday your servant
goes out?if you have but one? do you get up
a nice dinner for your family and see that
the service la excellent? Do yon not rather
use all the scraps and leftovers and do as little
as possible? Is the table ever property set so
that you do not have to get up and run to the
china closet ? Are jou not proud of the
meals and the service which you give the
husband who works for them ?
Arn'tyou ashamed that you cannot, do the
vork well or that you will not? In the vacation
period } our husband has to do extra
work for those who are away. Does be do it
In a slovenly manner? Does he1 not do the
work rleht. when your oook is away? Why
should you not make a slndy of your work
and beDfflt by tbeeclentlflcadvantaces which
have been provided Id recpnt years?
We &<1 vise you to cease comp'alnlng and
learn a little more about your business. Your
husband will appreciate It. If you bave
daughters to marry off, make tbem prime
Housekeepers and they will draw prlZ3B.?
