Timely Recipes?Watermelon
Rind Preserves, Cucumber,
Pickles, Etc.
The Progressive Farmer.
Iu answer to "Farratr Girl's"
inquiry, I aui glad to send the;
following recipe :
In making watermelon rind
preserves select the white, firm
inner rind, "neither pink nor
green/' Cut in the desired eliap
es, uot too thick, about a half
iuch will do.
Make a brine of one pint of
salt to one gallon of clean water,
in which soak the rind over
night. After this soak in clear
water, changing the water three
times, using each water one
, hour.
Now weigh the rind and allow
3 4 of a pound of sugar to each
pound of rind. Put the sugar
into the preserving kettle and
add enough water to wet it
thoroughly. Let this boil until
it will spin a soft thread. Now
add your rind, and put in the
sliced peel of one lemon to each
five pounds ot fruit, and a small
quantity of the lemon juice, and
an ounce of ginger root to each
five pounds of fruit.
Let this boil until the rind is
a rich clear pink, ueurly red.
Remove the rind to the jars, boil
the syrup a half hour longer, or
until it is nice and thick, and
pour over the rind.
This is a sure-keep recipe.
The main precaution is to be
sure the salt is all soaked out of
the rind betore preserving.
If "Farmer Girl" will follow
these directions, usiug good judgment
and a little preserverance,
I think she will be delighted
with her preserves. Sincere.

For watermelon riud preserves
that will not sugar : Fare the
rind, soak in salt and alum waer
ever night (not too strong);
wash thoroughly next morning.
Then add sugar. Cook until you
think it is done ; then cook nearly
as long again. When about
two-thirds done, slice one or two

is our recipe lor waterm Ion rind
pickles which we consider superior
to preserves :
Feel rind, cut in squares. To
one gallon of rind use irom 1 j
pints to 2 pints of granulated
sugar. Let stand over night.
Next morning take one-halt gallon
of good vinegar, (not too
strong) to one gallon of raid.
Four sirup off rind into vinegar
<>ud let come to boiling point,
skimming oil scum. Add rind,
cook until tender. Add any desired
llavor. Any ot the spices
make.a good llavor?especially
cloves and cinnamon.

Who Make Money
Without Cotton.
Southern Cultivator: Many of
our farmers lirmly believe that
cotton is the only money crop
we can grow. Well, let's see.
Sometime ago we met Mr. Kelly,
of DeKalb County, Georgia, and
he told us the following:
"S me filteen years ago, I
had saved up three hundred dollars,
1 borrowed a like amount
from a well to-do farmer in Rockdale
county and bought 40 acres
of land and started to grow cotton
with which to pay oil my indebtedness
on my little place. I
worked Hard and lived hard tor
three years, and at the end of
this time I found out instead of
reducing my dept I owed $350.00.
1 became discouraged, ami
went to ray friend, and asked
liirn to take the land as I saw no
prospect of ever paying him.
He talked to me a while, then
said?'No try a while longer.
Quit growing cotton, plant corn,
wheat, oats, peas and potatoes
and see how you come out.' I
took htm at his word. The next
fall 1 was enabled to pay him a
! him a little more than my interest.
The next still more. So in i
was ou' of debt. Now 1 own a
place worth $5,000.00 an 1 o?e
no man a dollar.''
Last week we went up to see
W. L. Richardson in Cobb county,
Georgia. We ton nil him
plowing his corn, putting a side
application of fertilizer around
it. He had fourteen acres of
very tine oats ; seven sown in
fhe tall and seven in the spring.!
He is counting on an average J
yieidof 50 bushels per acre and
we think lie will get it. He believes
in putting 100 pounds of
nitrate of soda per acre on his
grain, and lie showed us some
where this w,v applied, that was
as good as oats having SO loads
of cow manure per acre. He
had twelve acres in sweet potatoes.
Then he had a fine Berrauda
pasture and u iii?re herd of
Jersey cows in it. Mr. Richard'
son told us he and his wife were
going to take two months vacation
at the Springs this summer.
He has a beautiful home and i
everything nice and convenient
around him. Keeps five head!
