6 skinless, boneless chickdn breasts (^OOk
Puree all ingredients (except
chicken) in a blender or food
processor. Pour over chicken breasts and
marinate 4 to 10 hours. Bake at 350 degrees
for 30-40 minutes.
Serves six.

Peppery Parmesan Pan Rolls
1 16-oz. package ho-roll mix
1/4 cup grated parmesan cheese
1/2 tsp. coarsely cracked black pepper
2 tbsp. acceptable margarine*, softened
Egg substitute equivalent to 1 egg
Preheat oven to 375 degrees.
Prepare hot roll mix according to package
directions, but stir Parmesan cheese and pepper
into bowl with hotrroll mix, substitute acceptable
margarine for the margarine or butter and
use egg substitute for the egg.
Shape dough according to package directions
for pan rolls. Bake for 15to 20 minutes or
according to package directions.
Serves 16; 1 roll per serving. Preparation
time: 15 minutes. Rising time: 20 to 30
minutes. Baking time: 15 to 20 minutes.
*Select margarine with liquid vegetable
oil as the first ingredient and no more than 2
g. of saturated far per tbsp.

Open-Face Vegetable Sandwiches
2 to 4 tsp. Dijon mustard
2 whole-grain English muffins, split and
toasted
1/2 cup small broccoli florets
1/4 c. chopped red, yellow or green bell
pepper
1/4 s. shredded carrot
1/2 c. shredded low-fat Monterey Jack
cheese
Preheat broiler. Spread mustard over
the cut side of each English muffin half.
Arrange broccoli, bell pepper and carrot
over mustard. Sprinkle with cheese. Place
English muffin halves on the unheated rack
of a broiler pan. Broil about four inches
from the heat for two to three minutes or
until cheese melts.
Serves two; two muffin halves per
serving. Preparation time: 10 minutes.
Cooking time: two to three minutes.
