Business liaison Swentor explained there
are differences in food quality between ARA
and SAGA. "The quality levels in the contracts
specify that you must use Grade A

food and still not have the best.
"A Grade A hot dog can be the $1.50 pack
you buy in the store. That's what ARA
served?the kind where you grind up the pig
snouts. SAGA now serves an Oscar Meyer
all beef hot dog.
"WITH GROUND BEEF it can be Grade
A and have a difference in leanness. SAGA's
ground beef is more lean. ARA served sliced
chicken that was compressed with gelatin,
and now SAGA serves white breast meat,"
Swentor said.
Some items that have increased price
have also increased portions, such as
salisbury steak, London broil and grilled
cheese sandwiches.
But student Thomas said that although
increased portions are available, the

According to director Chandler, SAGA
cannot incease prices past a certain level
because its contract stipulates that its
prices must be competitive with area food
establishments.
TO DETERMINE what is competitive,
SAGA surveyed all restaurants and fast
food places within two miles of campus to
determine an average price for each item.

than that of many of the places surveyed.
SAGA's contract also restricts the profit it
can make. After a 4 percent profit is made,
SAGA must split any further profit with the
university, according to Chandler.
Besides improving food quality, SAGA has
provided diverse services at the campus
dining facilities.
PATTERSON HALL serves all-you-caneat
meals and also provides a "Wellness
Bar" of health foods.
Bates House also will have all-you-can-eat
meals, as well as made-to-order
delicatessen sandwiches.
Wade's Place will have^ a "Gourmet
Burger Bar" with such toppings as

Russell House Cafeteria will feature a
"Mexican Bar."
SAGA also has increased cafeteria hours
by 50 percent, according to Chandler. USC
cafeterias will be open 562 hours a week, 185
beyond the 377 offered when ARA was in
charge.
RUSSELL HOUSE CAFETERIA will be
open from early morning until seven at
night so students can come in and drink
coffee while they read, according to
Chandler.
SAGA spent between $60,000 and $70,000
on improvements and new signs to make the
dining facilities more attractive, Chandler
saia.
