Just past midnight in the Steak and Egg restaurant on
Gervais Street.one of the three customers yells for the cook to
turn down the air conditioner. Another customer walks
across the room and pries open the thermostat with a steak
knife to adjust the temperature.
The atmosphere is casual as the jukebox blares out a Rick
James tune, and Ed Pawlaczyk hurries about, working as
cook, waiter, cashier, busboy and dishwasher.
"We get the bar crowd, college students still out,
truckers? all walks of life. They want mostly breakfast:
steak and eggs, ham and eggs, hamburgers and
cheeseburgers, scrambled eggs," Pawlaczyk said.
SOME regular customers come more to socialize than to
eat.
Ed Popielarczyk visits the Steak and Egg so often he
sometimes gets his own drinks. "I come three or four times a
day for coffee and eat one meal a day here."
"I'm a disabled vet," he said. "My days fluctuate. Some
days I stay up late; some days I don't. I don't have a job."
He pulled out a cigarette and asked the busy Pawlaczykfor

a match. "I've smoked ever since Vietnam."
Popielarczyk spoke frankly of his psychiatric treatment at
me veteran s Hospital since 1969. "I have to learn to deal
with depression and fear and anger? not guilt, because I
didn't kill anyone," he said.
HE PRAISED the customers at the 24-hour restaurant.
"Most people are all right and honest, I believe. The postman
early in the morning is a pretty friendly fellow.
"Once in a while we run into someone who does not want to
pay a food ticket, and Ed and I have to run him down. Occasionally
we get a fight or two."
David Tate, the customer who adiusted the thermostat
has worked for 24-hour restaurants for five eventful years.
"I found a half pound of marijuana in the bathroom. I found
