Trustees
criticize report

A report on higher education was
criticized by the USC Board of
Trustees in special session Jan. 25.
The board said the State
Reorganization Commission's
report, which included a three-part
plan, was uneconomical and impractical.
The board favored a
reconstituted Commission on
Higher Education with a welltrained
staff as backup, and
reaffirmed its support of statewide
planning for higher education.
The board also approved a
change in policy which will allow
USC President James B.
Holderman to deal administratively
with changes in
student housing. The administration
rather than the board
will now decide such questions as
coed residence halls.
Holderman granted the board's
request -that the vesting period for
faculty members in the state

He likes women to cook
vegetables, however. "I got two
ladies here," he said, "and they
cook fresh vegetables real good. I

meat, things like that, by men."
The students in his classes have all
been men, and he likes that, he
said, "because I can be harder
with a man than with a woman."
He says he can tell by the taste if
a dish has been prepared by a mai^
or a woman. "It's nature," he said,
shrugging.
His designation as master chef
means he has the right to wear a
tall white hat. "Good chefs wear
higher hats," he said, smiling.

Running a restaurant is more
than cooking, Egloff said. Selecting
a site is very important as well

restaurant serves Continental food
and includes Chinese and
American dishes. Then the layout
of the restaurant, especially the
kitchen, is decided.
"All this starts long before the
cooking," Egloff said.
"My profession has paid me
good," Egloff said. "I was never
hungry, never without a job. I have
a wonderful home, sent my two
kids to college. I like being an
American citizen. And I get per
sonal satisfaction and happiness
out of my profession. I like what I
do."
So do many people who have
tasted the products of Max Egloff's
art.
