Short cour, in organic USC's short course program has produced tangible results in at least one area- a food co-op that grew out of the short course on organic, eating. The food co-op, a function of the Ananda Marga Yoga Society, acts as a buying agent for the people, according to its organizer, Diane Baltz. She said several other co-ops have been set up in South Carolina by the Office of Economic Op portunity and are operated in poor communities. Ms. Baltz, who taught the organic short course for two semesters said, "We thought it would be a good project to buy vegetables and fruit wholesale for the class, and this project ex panded into the co-op." "The co-op is run on a nonprofit basis," she said. "But members are required to work in the co-op." Of the co-op's 100 members, about 75 per cent are connected with the University, Ms. Baltz said. "We grew from 25 to 100 members in six months by word of mouth only; now we're ready to reach more people." The co-op, which began in September, operates on a weekly basis and is open to everyone. Members pay one dollar a week in advance for the produce and are required to pay $2 a year in dues. There is also a 5 per cent tax on each dollar spent, with the co-op's tax license and corporation charter coming from the Ananda Marga Yoga Society. Ms. Baltz said there is usually a 50 per cent reduction on fruit and vegetables bought through the co op. Prices vary with the season, but typical rates are 7 cents a pound for bananas, 4 cents a pound for potatoes and 6 cents an ear for corn. "We generally have up to 20 varieties of fruits and vegetables but this depends on what's being sold at the farmer's market," Ms. Baltz said. She said the co-op also sells stone ground whole wheat and grits. She explained that with modern processing the grain is ground by steel and the heat produced by this method results in the loss of vitamins.
