Cabbages and Sadebkraut.—The de-
mauu lor cabbages constantly increasing
in this country, while the supply is di
minishing. A few years ago many far
mers raised cabbages as a held crop for
supplying their cattle, sheep, hogs and
potltry with fresh food during the win
ter season. They were very cheap, as
the seasons were favorable to their
growth, and there were few insects That
troubled them. They were oiten sold
in the vicinity of neighboring cities for
one dollar per hundred in the fields and
gardens where they were raised. Bat
recently the seasons have been unfavor
able to the growth of cabbages, and the
imported cabbage-worm has made sad
havoc with those that were raised. Cab
bages have sold here as high as ten dol
lars per honored, and sauerkraut has
been impoited from Germany, and sold
on the maiket. Both cabbages and
sauerkraut from the same country have
been sold in eastern cities. The large
increase of German population, the
number of our native population thai
have learned to eat sauerkraut, and the
amount of cabbages required to supply
oyster saloons have increased the de
maud lor the vegetable that was at one
tune so abundantly produced. The de
mand lor them is large, and promises to
remain so. Cabbages can be shipped as
easily as potatoes, and can be kept over
the winter with less trouble. Sauer
kraut is as mucn an article of commerce
as canned fruit, and can be manufac
tured by t aimers and shipped to cities to
most excellent advantage.
DOMESTIC.
A BoLTLI*ABA1SSE AT HOME —A boull-
labaisse of sea-bass is easily made. Cut
up the fish, removing bones and skin
and the bitter, brown portion in the
head. You can add a couple of floun
ders, also cut up and boned. Then
gently heat in a saucepan two oun
ces of best olive oil, a bay leaf,
some minced sweet basil and two cloves
of garlic; when it has reached the fry
ing point, add the fish and a dozen large
oysters, a thinly-sliced lemon, three or
lour skinned and seeded tomatoes, an
onion stuck with one or two heads of
cloves, salt and pepper; for the coloring
and piqnant flavor add a teaspoonful of
powdered r dfron and a large glass of
white wine; cover well the whole with
cold water. The closed saucepan over
a very hot, bright fire for fifteen or
twenty minutes will be sufficient to re
duce the gravy and bring the bouilla
baisse to perfect on. A teaspoonfnl of
chopped parsley is added; again boil for
one minute, then place in a deep dish
some shoes of carefully browned toast,
and over this pour the soup. But the
fish must be placed in a separate dish,
the bay leaf, exhausted lemon and gar
lic removed before serving.
A oc UHON mistake in the cultivation
of tomatoes is to imagine thatit requires
an et ormous space to perfect its growth
in. Of course, if it is allowed to wan
der at its own sweet will, it will occupy
a great deal of ground. But this is not
at all the best way to get ripe fruit,
though any amount of leaves, stalks,
and green tomatoes muy be produced
by it. Please give the lollowmg plan a
fair trial. Set the plants in rows two
feet apmt, and fitteen inches apart in
the rows.
When the first bunch of buds has
fairly made its appearance, nip off tl e
whole of the shoots growing between
the stem and branches, but allow the
main stem to grow on until four or, at
most, five bunches of buds are formed.
Thm, the plant being probably about
three teet high,pinch ofl the main stem
tinee inches liom the highest bunch,
and continue to nip off the shoots as
betore, as last as they make their ap
pearance, just as in the cultivation ol
tobacco.
If this is properly done, the greatest
amount of ripe trait that the climate is
capable of producing will be secured
Stakes, about lour feet long, will be re
quired to tie the plants to. They
snould be driven firmly into the ground
and the stems should not be too tightly
bound. I have practiced this mode ot
growing tomatoes for twelve years, and
have never tailed to obtain an early
crop of well-matured Iruit. Keep
the ground well stirred and mulch
with hah-rotten dung. Lots of liquid
manure.
Rats in the Bog Pen.—There is
nothing more uetestable than a pig pen
infested with rats, for the vermin not
only annoy the animals hut commit de
predations on every other portion of
the farm. The pig-pen fosters them

plenty to eat, and can hide under the
floors. The best piecanticn is no floois
but rats will keep within convenient
distance of the pigpen, be as caretnl as
we may. A swaim of rats will consume
as much as the same number of fowls,
and the damage from burrowing, gnaw-
imr and thelt is very considerable.
Rats ar6 very careful and cannot be
trapped or poisoned easily. The best
plan to get nd ot them is to leave some
ol the hog feed outside of the pen every
evening. The rats will not touch it
perhaps, at first; but after awhile, if it
is lett there continually, they will ven
ture to tasie it. The next evening, it
they find th it no harm has occurred to
any one of their number fiom it, they
will eat a little more, until, finally,they
will look for it. By tins time-every rat
on the premises will be at tfie nightly
banquets; and,as tbev have gained con
fidence, all the larmer has to do is to
procure a reliable poison and every rat
is doomed. The wholesale slaughter
will prevent other rats Irom coming, as
tficy avoid dangerous places.
As to the immediate tuture of wheat,
the low rnUge of prices prevents British
India irom being as great a competitor
as last year, navigation in Nortnem
Russia is closed, the fall sowing of
w beat in England has been delayed by
floods, and oar farmers generally are in
better condition tor holding their crops,
while tfie present low prices tend to
increase the demand over tfie civi ized
world. ^
The common Uunow can be applied
to many more purposes than its common
one of preparing tfie ground for seeding.
It is one ol tne best implements lor fin
ing manure alter it lias been spread
broaocast, more thoroughly mixing it
with the soil and making the manure
doubly effective.
The Texas Btute Grange at its annual
session last mouth, shows an increase in
membership of over 8,t.'(J0 during the
past year. One hnnoied and twenty-
live dormant granges were revived and
eighteen new ones organized during the
year. Tnis is the way tha granges are
dying. ______
On land rich in vegetable matter a
good plan is to burn stumble rather than
plow it unuer. Yet if clay predominates
the stubble plowed under will do more
good by mechanically loosening the
soil than its ash could possibly p.-r-
form.
Every farmer should keep by bis ma
nure pen a few barrels of plaster,and as
often as once each week should strew
over the contentsa spiinkliug of plaster,
and this should continue during the en
tire winter in warm cellars.
The yield of cheese Irom Jersey milk
is surprisingly large. It is, at least,
twenty per cent, greater than the yield
from average milk. Only eight pounds
of it are required to make a pound of
cheese when it requires ten pounds of
other milk. -

The Morning Herald, Baltimore, Md.,
states: Major B. 8. While, of this city, de-
scrines his miraculous cure as follows. *‘I

“Did I ever tell yon how the deacon
gave himself away?” asked Fogg, as he
took his cigar cut of his mouth and
knocked off the ashes. “Gave himself
away ?” exclaimed two or three of the
boys m a breath. “Yes,” replied Fogg,
after taking a few whiffs to get his cigar
well a-goin; “the deacon, you know,
was one of those temperance chaps who
never drink anything but water, and
can’t tell one kind of liquor from anoth
er. We had a little sit down, d’ye see,
and plenty to drink as well as plenty to
eat. The deacon wouldn’t touch any
thing but water; never tasted liquor in
his life, he said, and he didn’t mean to
begin now. Well, one of the boys
ponred out a glass of gin on the sly,
and then put it down in place of the
deacon’s tumbler, And what do you
think the deacon did? Why, sir, ho
drank it off at one gulp, remarked care-
lesaly 'Very good water,” and filled the
glass up again with some of the same
sort. We thought it was all right
though. We didn’t knew what kind of
water he was used to drinking, you
know. But the deacon carried the
thing a little too far. When he tried to
open a champagne bottle with a cork
screw, we knew he was shamming, and
the old man had to own up to it, too.’
The Profession a Unit.
Mr. C. H. Draper, of No. 2*23 Main
Street, Worcester, Mass., volunteers the fol-
owing.

Neapolitan Cake.—Dark part: One
cupful ot butter, two cupfuls of brown
sugar; one ouptul of molasses; one cup
ful of strong cold coffee; four and a half
cupfuls of flour; four eggs; two tea
spoonfuls of soda well sifted with the
flour; two teaspoonfuls of powdered
cloves; two teaspoonfuls of cinnamon;
one teaspoonful of powdered macc; one
pound of stoned raisins; half a pound
of chopped figs; half a pound of weil
washed and dried currants. Bake in
jelly cake pans.
White part: One cupful of butter;
four capfuls of flour; four cupfuls of
sugar; two cupfuls of sweet milk; two
cupfuls of cornstarch; whites of eight
eggs; six teaspoonfuls of baking powder;
flavor to taste with bitter almond. Bake
in jelly-cake pans. Grate tfie peel and
squeeze the juice from two lemons; add
enough pulverized sugar to stiflen the
juice; spread it between the ckaes.
using alternately a white aud dark cake.
Frost the top and the sides of the cake
with Lemon icing. Half this quantity
makes a good sized cake.

ice cream is this: To one quart of rich,
sweet cream allow five eggs, and sugar
enough to sweeten to your taste; cook
in a pail or pan, set in a kettle of hot
water. When as thick as for boiled
custard take it out, and when cool flavor
it. If you put the flavoring extract in
when the custard is hot you will be
obliged to use much more. Let it be
cold before putting it into the freezer;
you gain no time by hurrying, net the
custard in the refrigerator or down the
cellar, then pack the ice and salt around
the freezer. Constant stirring is what
gives the desired flue grain to the frozen
cream. In peach-time quarters or sli
ces of the fresh peaches may be stirred
in aud frozi n with the cream. Pineap
ple is also'used, in this way, but. cannot
be recommenued, as it must b« very
indigestible.

There was a funny scene in one of
the big dry goods houses the other day.
A lady wearing one of those ugly, but
popular, insect-shaped ornaments upon
her shoulder, while examining some
goods, was observed by the floor-walker,
who stepped up with his opening-day
smile and new spring bow, to remark:
“Beg your pardon, madam, but there’s
a bug on your shoulder,” at the same
time making a grasp at the ostensible
insect, wbich, however, did not move.
The lady looked up with astonishment,
whereat he made another grab, and
this time succeeded in scratching his
linger with the pin by which the delu
sive decoration was secured. Hastily
drawing luck, with an exclamation that
the thing had stung him, the lady was
given time to interpose an explanation
of the object of his attack; and running
a gauntlet of titters and audible smiles,
the gentleman retreated to his usual
post of observation.

One reason why people are so often
unsuccessful in tbeir treatment of green
house plants is because when they are
i rst brought home the jars are not
properly cared for. They are usually,
in the greonhouse, sunk in moist sand,
and if, upon being removed, they are
placed where the sun strikes the out
side of the jar, the roots are seriously
affected. Oue way to prevent this is to
set the small jars inside larger ones for
a time until the plant has become ac
customed to the change. A damp cloth
covered with a papir may be wrapped
around the larger jars with good effect.

For soda biscuit take a quart of* un
sifted flour, a tabkspoonful of sngur,
a tableHpoonful of butter, three tea-
spoonfuls of baking powder, one tea-
spoonful of salt, and milk enough (nearly
a pint) to make a sott oongh. Lard or
drippings may be used instead of butter,
and water instead of milk. The dry
ingredients are mixed togetner and
rubbed Mirough a sieve; then the milk
is added, and the mixture stirred witfi a
spoon until a smooth paste is formed.

led lightly with flour, roil the dough
down to the thick ness of about half an
inch. Gut into small cakes and bake
fifteen minutes in a very hot oven.

times it is torp d and secretes too slowly, at other

Veal Bibds,—Take slices of veal from
the loin cut very thin. Wipe them,
remove the bone, skin and fat, and
pound until they are a quarter of au inch
thick. Trim into two and a-half by
four-inch pieces. Chop the trimmings
fine with one square inch of fat salt
pork for each bird. Add half as many
fine bread crumbs as there is meat, sea
son highly with salt, - pepper, thyme,
tomon, cayenne and onion, the taste
c ecting the amount of each seasoning
used. Moisten with one egg and a little
hot water. Spread the mixture ou each
slice of meat, roll up tightly, aud tie or
fasten with a skewer. Dredge with
salt, pepper aud flour; fry slowly in hot
buLer until they are a golden brown;
then half cover with cream, and simmer
fifteen or tw nty minutes or until tender,
Remove tbe strings, aud serve on toast.
Garnish with points of toast and lemon.
If the veal used seems tough, dip the
slices in olive oil before spreading with
the stuffing.
