rations on the farm receive bo little at
tention as the aeleotion and keeping of
potatoes for pleating, yet the imooesn of
the crop depends very much cn the con
dition of the potatoes planted. How
often we hear farmers complain that
their potatoes do not come up well or
that they fail to make a vigorous growth
usually attributing it to the state of the
weather, when in many oases the trou
ble is with the potatoes planted. In se
lecting and keeping potatoes one impor
tant iaet is usually entirely overlooked,
which is, that the potato is not the seed
therefore is more liable to be injured by
keeping. Most of seeds are covered
with a hard substance which protects
them from the light and the sudden
changes of temperature, if kept in a dry
plaoe; but the potato being simply a
tnber has no such protection, therefore
ia very sensitive to light and variations
of temperature, even though kept m a
dry place. In fact, a potato is similar
to the root of a tree when severed from
the tree, which we are so careful to keep
in a dark, cool place if we wish to keep
it in a healthy condition and grow wall
when set in the ground. - The potato
may endnre more than the root of a tree
without completely losing its vitality,
but it suffers in the same way and, if
not entirely killed, is inj ured in some
degree by being kept where it is too
hot, too cold or too dry. If it is kept
too hot it sprouts badly, and thus loses
its vitality, never again producing snoh
vigorous stalks as come from the first
sprouts. It kept where it is so cold as
to chill it, it is worse than keeping it
where it is too warm, as it does not take
much of a chill to prevent it from grow
ing at all. The farmer in selecting po
tatoes for planting should ever keep in
mind that ho is dealing with tuhers,and
with seed, therefore size and form
isYiot so important as health. When he
scions he cares more to have
aids and a healthy shoot than he
!or the particular form; and in
his scions he uses great care to
em where it is cool, and neither
nor too dry. The same priuci-
ch holds good in the scion applies
[potato, especially that which ap-

On* German friends will relish this
recipe and also the directions for mak
ing soar goose, which follow it. Cat
out the breasts of yonrg, fat and well-
cleaned geese, rob them well with salt
and with a little saltpeter, place in a
jar or other vessel, with a weight upon
them. Let them remain thus for ten
days, after which put them in smoke
for two weeks. To utilize the remain
der of the goose after cutting out the
breast for smoking, It is prepared as
follows: Cat np the flesh into suitable
pieces, then take of vinegar and water
oi equal quantities, enough to cover
the meat, add a handful of small onions
and salt, pepper, doves, etc.; boil to-
gether until the meat ia done. This, if
pat in a cool plaoe, will keep well, and
make an excellent dish when warmed
up or eaten cold.
* How to Usb Kkbosbnx.—Where ker
osene is used ' jese precautions are in
dispensable: Use lamps with chimneys
—the taller the better. Always keep a
supply on hand in case of breakage.
Fill and clean the lamps in the morn
ing. Keep the body of the lamp near
ly foil of candle-wick. Trim off all the
charred portions of the wick. On re
tiring set the lamp where there is a
draft, ont of the room, and turn down
the wick until the charred part, which
is slightly enlarged, fills the tube, and
so prevents evaporation. Avoid always,
if possible, carrying lamps frem one
portion of the house to another while
lighted. “So may your days be long
in the land,”
Stuffed Cabbage.—Take a large
cabbage and ont ont the heart; fill the
space with a staffing made of cooked
tnrkey, chicken or any meat except
mutton or lamb; chop very fine and
highly season: mix with one mashed
potato, and the yolk of one egg and twe
spoonfuls of the gravy stock, roll in
balls, and roll the balls in floor; stuff
the cabbage and place the loose leaves
which yon have removed over the hole
at top and bottom with them, and tie
the cabbage firmly together and boil in
a covered kettle for two hours. The
wa^er should be salted. It makes a
very delicious dish, and is useful in us
ing up small pieces of cold meat.

Honey Vinegar.—It would seem that
in this preparation extremes meet.How
ever, on good authority it is stated that
good vinegar has been made from honey
or honey cappings, and it is after this
method: “Put the cappings intoadip
per and let them remain about twenty-
four hours; then place them in as much
water as will sweeten the mixture a lit
tle sweeter than new eider. The cap
pings are left in water an hour or two
then put in a strainer to drip for about
twelve hours. Save the drips and put
into the first mixture. This sweetened
water soon begins to ’‘work,” and the
scum should be removed as often aa it
rises. This I'ermeLtation continues un
til it reaches the vinegar point. One
year is required to make good vinegar.
It would not be profitable to use good
honey t or this purpose,but there is more
or less waste which can be advantage
ously used in this way. Ceitainly if
from every 1,000 pounds of extracted
houey there can he made a barrel ot
vinegar,and that from the refuse largely
it is wortli while to cio it.
A Georgia local paper reports that
Mr.D. Bailey,of Forsy th county,bought,
and has now, four sheep, paying $G for
them. Lai-t fall he killed two lambs,
which netted him $5, while the wool
and tallow brought $1, making a total
of $C. Although the number was few
the investor secured a return of the
oapitrl the first year, while his flock is
increased to six. Sheep seem to pay
well in that section.
A young colt was recently sold for
several thousand dollars, and the les
son is thus taught farmers that the re
putation of the parents places a value
on an animal before it la tried on its
own merits. This little colt may in the
future prove worthless, or it may be su
perior to its parents, but the fact of its
oeing well bred gave it a high value.
Farmers, improve yonr stock.
Bullock's blood is used on a large
scale as a manure, but chiefly for mix
ing with other fertilizers. In its natural
state blood contains about 3 per cent,
of nitrogen; when dried it contains 12
per cent. It makes an excellent ma
nure for turnips when mixed with bone
dust or phoMpiiatic guano. Mixed with
peat or mold it may be appped as a
top dressing to wheat crops and to grass
land.
The Horse. - Russia leads the world
in the number of its horses, poss^ssiug
a total of 16,440,000 head. The United
States comes second, with about 10,
155,000 head, and the present fine out
look m horse breeding indicates that we
will eventually stand at the head. In
the mutter of quality England should,
perhaps, be awarded the leading posi
tion.
The cluster of eggs that may be
found on apple tree limbs should be
picked off during open weather in the
winter, and thns prevent the hatching
of tne tent caterpillar. The eggs ap
pear to be tarnished, bnt such is not
really the case, since a light coat of
varnish or oil would destroy their vital
ity by exolading the air.
Fruit Eatino —When frnit does harm
it is because it is eaten at improper
times, in improper quantities, or before
it is ripened and not fit for human stom
achs. A distinguished physician has
said that if his patients would make a
practice of eating a couple of good oran
ges before breakfast, from February to
Jane, his practice would be gone. The
principal evil is that we do not eat
enough of fruit; that we injure its finer
qualities with sugar; that we drown
them in cream. We need the medical
action of the pare frnit acids in oar
system, and their cooling corrective
influence.
Wall Pocket fob Sponges.—Take a
piece of heavy pasteboard, from which
out five pieces as follows: The front
ten inches long and five inches high,
the back fourteen inches high and ten
long, the bottom ten long aud four deep,
the side pieces five inches high at the
front, six at the back, and four inches
deep. Shape tastefully by catting
curves in the back and iront and slop
ing the sides in an arch. Cover with
enameled oil cloth; ornament this with
scrap pictures, and finish with a bind
ing of galloon or ribbon.
Snowball Pudding.—Boil one quart
of rich milk aud then thicken with a
tablespoonful of flour. Beat np the
yolks of four eggs with three tablespoon
fuls of white sugar. Then pour the
milk slowly into the eggs and sugar,
stirring all the time. Poor this enstard
into a pudding-dish and brown it slight
ly. Beat up the whites to a froth, adding
four tablespoonfuls of sugar, and flavor
ing with lemon. Drop it on the cos
tard (when browned) in the form of
balls as large as an egg.
{Smoky Stoves.—There is a very sim
ple way of avoiding ths disagreeable
smoke and gas which always poor into
the room when the lire is let in a stove,
furnace or fire on a damp day. Pat in
the wood and coal as usual, bnt before
lighting them ignite a handful of paper
or shavings placed on the top of the
fuel. This prodnees a current of hot
air in the ehunney which draws np gas
and smoke at ouoe. Not one ont of
every fifty persons ever thinks of this
Care of Plants.—By placing plants
at a wmdow where they can have the

a stove in the room, or born gas, one
can easily have flowers daring the win-
| ter. Each pot should not be watered
too mnoh. Care most be taken not to
open the window and let the cold air in,
as it would instantly injure the plants.
It is necessary, too, to occasionally wet
the leaves.
To have the genuine roasted green
coin is to turn back the husks, remove
the silk, then replace the husks as close
ly as possible, aud bnry the corn in the
hot ashes of a wood fire. This is the
very best way in the world to cook
green corn, bnt to be thoroughly enjoy
able it shonid be eaten in the weeds or
on the sea shore, and will need to be
salted and battered.
Stains Caused bx Mildew,—Mildew
is removed w several ways from linen.
Some dip the article in soar buttermilk,
lay it in the son to whiten, and then
wash in clean water. Others apply
soap and chalk, or soap and starch,
adding half as much salt as there is
starch, and the juice of a lemon.

Cream Beer.—Two and a quarter
pounus of sugar, two ounces of tartaric
acid, juice of one lemon, three pints of
water. Boil five minutes; when cold
add the whites of three eggs, beaten,
one cup ot flour, an onnoe of flavoring;
bottle aud keep rooi; put two table-
spooiifu s in a tumbler of water and one-
third teaspoonlul of soda.
Whooping Cough Remedy. —One pint
crashed suntloa er see is. put them In one
quart of water and simmer to a pint,
add one pound ot loaf sugar and one-
half pint of brandy; dose one-half to o e
teaspoonlul. according to age. This rem
edy will so alleviate the rigors of the
disease that the weakest constitutions
