Thk Paonx of Cows.—The Darling
ton. (Wia.) t Republican published the
foil jwing statement, made by the pro
prietor of a creamery of that ’ laoe: The
total income of twenty-eight patrons
was $55,936 from 211 average cows,
equal to $2u.36 per month far the aver
age lime, live months and twelve days.
All cows Will give a flow of nolit eight
montns in tne year, and many contend
that a heifer biu’tea rigid) will uow 11
months at 5 years old; eail the season 8
montns, anu we have as the butter pro
duct $38.96. Every calf dropped is
worth $5; tne siani milk is worth at
least $3. Hue we have the average
cow producing neatly $47 a year. Is it
any wonder that dairy farmers in New
Xork, Pennsylvania, and Northern Ohio
live in fine houses and have big barns?

The Bed Spider.—In dry sir;tle red
spidt), the most destructive of plant
enemies, is cpt to florrisK Is is so
small that one is not apt to see it until
great damage is done. It is no larger
than a needle point, and is generally
found oa the under sruiacc of the leaf.
They are cadeu *. piders” because they
make like a tine "arachnoid,” as
the learned call those insects which be
long to the spider ta.be. If one has
but few plants this troublesome insect
may be easily kept down by continual
examination and crashing witn huger
and thumb. There are, however, Bom°
plants which have leaves that will not
admit of this sort of handling. It is,
therefore, a good plan to place the
plants on their sides occasionally and
syringe them wi:fc water warmed to
about 130 degrees. Soapy and other
washes often recommended are also
great aids in this washing process.
Time was when th-s bean crop of
'Western New York ranged from twenty
to thirty busht la per acre; but several
farmers say it will not be over 8 or 9
bushels this year. One field of thirty
acres, very carefully fitted aud cultiva
ted, gave only between thirteen and
fourteen bushels per acre. Another,
near the highway, which was thought
as promniug as any, only turned ten
bushels per acre. Several hundred acres
were destroyed by hail in the towns ot
Caledonia, York and other towns; many
fields were injured of using too much
seed, caused by the weevil scare about
liianting time.

Millet is an excellent fodder plant,
of which cows are exceedingly fond. It
is a warm weather crop, and needs to
be grown on a light, sandy soil. By
manuring well it may be made to pro
duce irom two to five tons cf hay to the
acre. A copious flow of milk is produc
ed i y cutting the millet, salting tl ghl-
ly, moistening, and sprinkling with a
little meal.
Up to four years oil the ege of sheep
is readily ascertained by examining
their mouth. Tuty cast their sucking
teeth the first a ear, putting in two large
teeth in the centre ol ihe lower jaw at
a year old. Each year two more teeth
are added, auu at four years old, with
eight teeth, the sheep has a full mouth,
and is at its prune. The decay then
vanes with the kind of feed, being most
when fed corn in the ear or roots.
Chocolate Cream ac Baiu Marik.—
Dissolve a quarter of a pound of cocoa
paste ou a moderate fire in half a pint
of boiling water; add half a bean of van
illa, split and out up fine, and half a
pound of pulverised sugar. When the
whole is perfectly dissolved, mix with it
one quart of scalding hot milk. Then
pour it gradually on ten yolks and one
whole egg, stirring continually and
briskly with a whisk. Add to this a
pinch of salt. Then paas the whole
through a hair sieve, and poor it into a
mould, the inside of which yon have
slightly battered. Place the mould in
a stew-pan, which yon fill with boiling
water to within half an inch of the top
of the mould; then place the stew-pan
on hot ashee, covering it with a lid, on
which yon place some live coals, Add,
from time to time, as mnoh fire around
the pan as will keep the water nearly
boiling, bat be careful that it does not
boih The mould should xemaiu about
an hour in the stew-pan, or until the
cream is saffioiently done, which you
ascertain by its easily separating itself
from the sides of the mould; then take
it out of the stewpan, and when the
cream is no more than lukewarm turn
it upon a dish. This cream may be
served up plain, or with the following
white sauce: Pour a half-pint of boiling
cream or milk gradually on the yelks of
three eggs, stirring with a wooden spoon
or spatula, adding three ounces of fine
sugar aud a gram of salt. Pat this on
a moderate fire, stirring continually
until the cream sticks to the spoon.
Strain it through a hair-sieve, and when
you are ready to serve pour it over the
cream upon the dish,

Racahoct des Arabs Is a most valua
ble aud agreeable beverage for invalids,
purticularly for dyspeptics and persons
of weak and delicate constitutions. It
is an aliment rich in all the nutritions
principles found in the most valued
forms of food. As a beverage it is to
be used iu the same way as tea or coffee.
Bacahout is compounded in the follow
ing manner: Mix together one pound of
the best cocoa paste, grated finely, one
pound of the finest possible sugar dust,
one pound of rice fiour, a quarter of
pound of arrowroot, a quarter of» pound
of sugar of milk, two ounces of pulver
ized salep and one bean of vanilla, pul
verized fine, with a few lamps of sugar.
When yon desire to use it boil one pint
of milk and add to it two tablespoonfols
of the raoahout, mixed smoothly with a
little water; boil for two or three mi a
utes, stirring constantly. It is then
ready for use. If required thicker use
three tablespooufuls of the compound.

gardeners in Canada, when in that conn
try recently, that the English plan of
preserving grapes in bottles of water
was not in uncommon use. The bunch
es are cut with pieces of stems, and

grapes can be preserved tar into the
Spring season.
It never pays to do anything by
halves, aud especially is this truo About
the care and handling of horses. A
few moie minutes grooming each day,

see him, and not only afford you plenty
of chsnces to dispose of him. but ui

Do not fatten hens if you expect them
to lay. Corn and meal should die fed
very sparingly to laying hens; wheat
screenings, buckwheat, and oats thrown
to tnem just before they go to roost at
night wilt be ait they will require,unless
it is a few broken oyster sheik and
bones.
As timothy grass seed if sown at the
same time as winter wheat is apt to
crowd the grain too mnch, the better
way is to wait three or tour weeks until
the wheat is well up before sowing the
timothy. Bow just before a rain,and no
harrowing or brushing will be needed.
Hog Cholera.—Every paper in the
United States ought to keep the fact
before its readers that bnrnt corn is a
certain and speedy core for hog cholera.
The l est way is to make a pile of oorn
on tho oobs effectually sooroh it, and
then give the hogs tree acoesi to it.
Grapes, raspberries and blackberries
are better adapted to high, dry ground,
especially the more tender sorts. The
more hardy kinds may be grown on
low ground.
The round leaf variety of spinach is
the most preferable for family use, as
well as for market purposes. It is not
only of the finest quality, but is exceed
ingly hardy, standing the most severe
Wmtet-weather.
• When it is desired to protect some
particular plrnt that las attained con
siderable size it may he done by sur
rounding it with rye straw,tying the tep
of the straw well to keep out the rain.

A Dish for High Tea.—Take equa
quantities of cold boiled ham and veal
chop them fine, not at the same timp t
bat keep them separate; boil say half a
dozen eggr. hard, and chop them also
then in a pudding-dish put a layer of
veal, sprinkle pepper and salt over it,
and moisten it with water or with a lit
tle Worcestershire sauce; then put a
layer of ham, and then of eggs, with
pepper and salt over them. Keep on
iu this way until the dish is loll, or your
material is used up. If the ham had
some fat on it you will not need to add
any butter on the top, cover the pud
ding-dish, and bake slowly for four
hr urs. Then take it from the oven, set
it in a cool room with a heavy weight
ou the top. By tea time it ought to be
cold and firm enough to out in thin,
smooth slices. It is best though to
make this the day before you need to
use it.
Indulgent psrouts who allow their child
ren to eat heartily of high-seasoned food,
rich pies, cake, <fcc., will have to use Hop
Bitters to prevent indigestion, sleepless
nights, sickness, pain, and, perhaps, death.
No family is safe without them in the
house.
Creme Patissierb.—Put the yelks of
six eggs and two teaspoonfuls of sifted
flour into a stew-pan. Add gradually
to it a pint and a half of boiling oream
and a pinch of salt; then place it on a
moderate Are, stirring it with a spatula
till it begins to thicken,’when you take
it off, continuing to stir it, in order to
make it perfectly smooth. Then put it
back on the fire, stirring it for five or
six minntes, until it is set Put a quar
ter of a pound of butter in a pan on the
fire, skim it, and continue it on the fire
till it has acquired a light-brown color,
when yon instantly mix it with the
oream, after which add to it a quarter
of a pound of grated cocoa paste, togeth
er with four ounces of macaroons coarse
ly broken up. You may flavor it with
a little maraschino or orange-flavor
water. In case the cream should be too
stiff add a little more oream; if the
contrary, the yelks of two eggs.
The advertisement of the New York Sun

of two layers of white cake with one of

of sugar, one-third of a cup of butter,
one onp of floor, one egg, one teaspoon-
ful of baking powder, and nearly one
cop of hickory-nut meats.
