"Fruit for canning should bc fresh,
firm, of good quality and not over
ripe.
".For canning fruit allow one third
Its weight In sugar, and two and one
half to three cupfuls of water to each
pound of BUgar.
"To sterilize jars: Wash jars and
fill with cold water. Set in a kettle
on a trivet and surround with cold
water. Heat gradually to the boiling
point, remove from kettle, empty and
till while hot. Let covers stand in
?hot water five minutes. Dip rubber
' bands in hot water but do not allow
them to stand. Always use new rub
bers and see that the covers are In
perfect Bhape."
