Pan Dulce
Ten pieces of raw sweet, potato
r>ne inrh suqare and one fourth inch
Lf/ick.
Four tablespoons full of red cin
namon drops.
'ITiree fourths cup of Water.
Two tablespoon full of sugar.
Dissolve the cinnamon drops and
sugar in hot water. Drop in the piec- |
es of sweet potato and cook gently j
until tender and syrup is absorbed.
Cut a round of pastry with a scal
loped cooky cutter. Spread a p.'eco
of candied potato ever half of each
round, cutting the outer edge so that
it spyoads out fanwiso over half of
the pastry, allowing the edge of the
potato to tfh'ow. Brush the tops with
white of egg and bake tr\ a quick
oven.
